Thanksgiving-inspired Krokiety
- Pan-fried buckwheat crepes stuffed w/ heritage turkey, honey-horseradish sweet potatoes, chard, sauerkraut, bacon, and mushrooms, served w/ our toasted black pepper and pickled cherry jam
Why this, why now? When you choose to support non-industrial meat producers, you join a network of small businesses that are exposed to a lot more volatility than other larger entities. In 2023, the had a low production year of heritage turkeys, their worst in 15 years. As a result, in 2024 committed to helping them raise an additional backup flock. But this time, it ended up being a banner year. We used turkey from that additional flock to make these krokiety for a “2nd Thanksgiving” Polish-style celebration during Memorial Day weekend—the halfway point between two very delicious holidays
