---PAIRING WINE AND FOOD---
We all know that food and wine go well together, but do you know which wines go best with which food?? It's important to be a hospitable host at parties and events and serving the right wine with your food can enhance your guests experience. Here is a chart you can relate to on which wine to serve with which food you will presenting at your next get together!!

Enjoy!! Chef Matt

SIMPLE CEASAR SALAD... I'm a fan of Caesar Salads. There simple yet full of flavor, crisp, tangy and sweet all mixed into one, SORT OF HEALTHY SALAD. This CEASAR is made with a mixture of Kale and Romain lettuce, Cojita Cheese, and left over Corn Bread Croutons. It's dressed in a simple avocado dressing. Ask for tips or concerns in you cooking kitchen at any time!!! Enjoy!

YELLOW STUFFED BELLPEPPER!!
--- I like to make mine with left overs, you can use whatever you like. I take the bell pepper and cut the top off at an inside angle. Clean out the seeds and veins. Fill it with your favorite stuffing ingredients, and place the lid back on top. Put it in a vessel that you can cover. Add a 1/2 inch of water in the bottom, and cover with foil. Cook at 425 for 30 min. Remove from cooking vessel and place on tray, add your favorite cheese and place back in the oven for 10min at 425. After pulling it out I used cold dipping salsa as a base to place it on, I like the cold and hot mixture. I added sour cream and a lime for flavor!! The mix for the stuffing I used tonight was a Cilantro Rice with Fresh Lime Roasted Pork, Oaxaca and Cojita Mix of cheeses. Quit easy and delicious!!! Please message me for any questions!!!! Good Luck and Great Cooking!

-- Knife Safety 101--

-Here is a few images I found to show the proper way to handle a knife and how to place your opposite hand for cutting in the kitchen.
-Knife Hand-
You always want to have control of knife! This means holding it correctly. Place your pointer finger and thumb on each side of the blade holding the actual handle with only your three teaming fingers. This will make the knife more an extension of your arm than a motion of the wrist. Having the knife placed in your hand this way will be more comfortable and useful once you get accustomed to it!

- The Odd Hand-
When cutting our opposite hand tends to get in the way. Knife cuts are the number one accident in all kitchens!! Knowing how to fold your hand over and still keep control of your food is tricky. I found when I was learning was to pretend my fingers were the flaps to a wood chipper and my thumb was the man pushing the logs through. If you fold your fingers correctly you will never never cut yourself!!

REMEMBER KITCHEN SAFTEY COMES FIRST!! Especially in your own home!!!!

Thanks Chef Matt

-Do You Know what a Temperature Danger Zone Is?--

- While Preparing or Storing for later use the Temperature Danger Zone is critical to good food handling. The Chart Below gives a reference to this point as well as what Temps to hold meat, poultry and fish at.-
HINT/ You have a countdown of 3 hours in the Danger Zone once you exceed that dispose of the product! /
