๐ฝ Grilled Corn & Feta Wraps
A fresh, savory wrap bursting with smoky corn, creamy feta, and zesty herbsโperfect for lunch or a light dinner!

Servings: 4 wraps
๐ฏ Ingredients:
2 ears fresh corn (or 1ยฝ cups grilled corn kernels)
4 large whole wheat or spinach tortillas
1 cup crumbled feta cheese
1 cup cherry tomatoes, halved
1 avocado, diced
ยฝ red onion, finely chopped
ยผ cup chopped fresh cilantro or parsley
2 tbsp olive oil
Juice of 1 lime
Salt and pepper, to taste
Optional: ยฝ tsp chili flakes or smoked paprika for a kick
Optional spread: hummus, tzatziki, or Greek yogurt
๐ฅ Instructions:
Grill the corn:
Brush corn with a bit of olive oil and grill over medium heat for 8โ10 minutes, turning occasionally until charred in spots. Cut kernels off the cob once cool.
Make the filling:
In a large bowl, combine grilled corn, feta, tomatoes, avocado, red onion, herbs, lime juice, and remaining olive oil. Season with salt, pepper, and optional chili flakes or paprika.
Assemble the wraps:
Spread a spoonful of hummus, tzatziki, or yogurt onto each tortilla if using. Add a generous scoop of the corn-feta mixture.
Wrap and serve:
Roll each tortilla tightly like a burrito. Slice in half and serve immediately, or wrap in foil for on-the-go meals.

Add grilled chicken or black beans for extra protein.
Swap feta for goat cheese or cotija for a twist.
Serve with a side of cucumber salad or sweet potato fries.
