3 boiled & shucked corn cobs
1/2 small red onion finely diced
chopped cilantro (to taste)
heavy drizz of evoo + red wine vin
feta cheese

We discovered these sweet potato “glass” noodles a couple years ago and were so excited to finally find them at a local market that we both just had to get in the kitchen and experiment STAT! 👩🏻‍🍳👩🏻‍🍳 The first dish is a spicy chilled noodle salad with fresh lime juice, jalapeño and a homemade peanut dressing. The 2nd dish is a warm and flavorful take on “japchae.” Both dishes are vegan, soy, gluten and dairy free! Which would you dig into first? 😋 @ Boca Raton, Florida
