Tasting Time! Being able to pull out tasting notes from spirits isn't a superpower & doesn't have to be pretentious. It just takes practice and a little bit of patience. Why is it important, though? It's not to tell people you smell sandalwood and taste roasted chestnuts. For me, it helps inform the ingredients and brands of spirits to use in our cocktails. Blending flavors in cocktails is often a trial and error process, but being able to identify what you're starting with gives you a great head start!

We love our couples, and we feel so grateful that they trust us to build them delicious drinks that their guests will talk about for years to come! This beautiful couple is no exception, and took a leap with me as I offered up a tequila cocktail sous vide with beef jerky, sherry caramel, guava, a little lime, force carbonated and served over ice . Sounds kind of crazy right?! Well, it was crazy. Crazy delicious!

I've been working on some new things for a couple of consulting projects lately. I've always liked the idea of serving a cocktail as a single bite or as a small accompaniment to a paired dish. I've had this one on paper since 2019 but never put the time in to bring it to life.
