First time trying my hand at Kalbi (Korean short ribs) and it definitely won’t be the last. The marinade has kiwi and Asian pears which have enzymes that tenderize the meat. Sautéed spinach, spicy kimchi and sweet potato noodles made excellent sides. Pistachio crème brûlée for dessert.

Thanks to a video I saw from Chef Tom with All Things Barbecue, I decided to make my own smoked lemon pepper and smoke roast a chicken on my Yoder Smokers YS1500. Peeled a 1/2 dozen lemons, dehydrated them in the smoker and then into a spice grinder with peppercorns and a garlic herb blend. Spatchcocked the yard bird and fire roasted it at 400°. If you are a lemon pepper fan, it was definitely worth the effort.
