The ever-popular American grilled cheese. It has taken on many changes over the years, but its essence remains the same: a warm, crispy exterior encasing gooey, melted cheese. Whether made with classic white bread and American cheese or elevated with artisanal bread and gourmet cheese, the grilled cheese sandwich is a comfort-food staple. We added tomatoes to this one creating an even more flavorful bite!

Life, no matter how small, is precious.

When a turtle crosses the road, it is usually following an innate drive to find a mate, seek a nesting site (especially during late spring and summer), or relocate to a new wetland habitat. Spiritually, encountering a crossing turtle is often viewed as a symbol of good luck, longevity, and steady perseverance.

It's that time of year, and the roads are a dangerous place for these guys. Today, we saved two turtles from the road. I couldn't resist giving each one a kiss before watching them continue their journey.

The Italian pepper and egg sandwich is a hearty, meatless classic born out of necessity in the late 19th and early 20th centuries. Created by Italian-American immigrants in Chicago and New York, it became a beloved Friday staple for observant Catholics who abstained from eating meat during Lent.

Faith and Fasting -

Prior to 1966, strict Roman Catholic fasting rules required practitioners to abstain from eating meat every single Friday of the year. For Italian-American immigrants operating mom-and-pop sandwich shops, delis, and hot dog stands, this posed a problem. They needed a hearty, filling, and delicious alternative to their usual hot dogs and Italian beef.

To keep their Italian-Catholic customers coming in on meatless days, clever cooks began utilizing the ingredients they already had on hand: soft Italian bread, eggs, and the sweet green bell peppers used for their Italian beef. The resulting scrambled egg and pepper combination was an instant hit.

Of course, we had to add Galbani, and lots of garlic - after all, when are you not going to add garlic?
