Gratitude for a Community That Shows Up 🤍

This past week, PNW Plateful, in collaboration with Calypso Kitchen, was able to send out over 1,000 hot, freshly cooked, nutritious meals to neighbors affected by the recent flooding in Everson, Nooksack, and Sumas here in Whatcom County.

This work was only possible because of the incredible organizations and individuals who stepped up alongside us. We are deeply grateful for the support and collaboration of:

State Senator Sharon Shewmake
State Representative Joe Timmons
Resilience Fund of Whatcom Community Foundation
PeaceHealth St. Joseph Medical Center

Their support allowed us to cook, pack, and deliver meals with care, dignity, and urgency.

We also want to extend heartfelt thanks to every volunteer, driver, organizer, neighbor, and community member who found a way to help this past week whether through donations, deliveries, check-ins, coordination, or simply showing up for one another. The care we witnessed across our community was powerful.

On Saturday, I had the opportunity to join Senator Sharon Shewmake on deliveries, and it was a moving reminder of how much a warm meal can mean during a moment of crisis, and how strong our community is when we work together.

At PNW Plateful and Calypso Kitchen, we are grateful for the trust placed in us, for the partnerships that make this work possible, and for a community that continues to lead with compassion.

Thank you for standing together. Thank you for helping in every way you could. Thank you for being here for one another.

In response to the recent flooding in Whatcom County, PNW Plateful, in collaboration with Calypso Kitchen, is preparing and distributing 150 hot, nourishing meals each day this week to families and individuals impacted by the floods.
This work is made possible through the collective support of community partners who have stepped up to ensure our neighbors are cared for during this time, including:
~ Calypso Kitchen
~ State Representative Sharon Shewmake
~ Representative Joe Timmons
~ PeaceHealth St. Joseph's Medical Center
~ Resilience Fund of the Whatcom Community Foundation
Because of this shared effort, hot meals are being prepared daily and delivered throughout the county to provide comfort, stability, and dignity to families navigating the aftermath of this disaster.

Caribbean Warmth, Island Soul, for the PNW cold.
There’s something about fall and winter in the Pacific Northwest that makes me lean into comfort,slow simmered pots, fragrant steam, bowls that feel like a hug.
But truthfully… stews, soups and braises were comfort even in the Trinidadian heat I grew up in.
Rainstorm or blazing sun, soup, stew, braise were always welcome.

Now, living far from home, these dishes take me right back to who I am.
This week in the kitchen I simmered:

🍲 Stewed Chicken with Long Beans (Bodi) tender, saucy, full of bell peppers and tomatoes
🍛 Curried Beef with Potatoes + Carrots, melt-in-your-mouth beef, warm spices, deep flavor
🥥 Light Coconut Curry with Flat Rice Cake Noodles broccoli, peppers, mushrooms, meat-free, silky, vibrant

All three are pure comfort, have the beef and chicken over rice, with naan, quinoa, or whatever grain you love.The rice noodle dish can be eaten on its own or paired with a main. Yum!

Caribbean Warmth, Island Soul, for the PNW cold.
There’s something about fall and winter in the Pacific Northwest that makes me lean into comfort,slow simmered pots, fragrant steam, bowls that feel like a hug.

🍅✨ One pot, endless possibilities! ✨🍅

At Calypso Kitchen we’ve supported Pnw Plateful in its goal to make a positive impact against food insecurity in our community. Here we are showing how simple, affordable ingredients can turn into meals full of flavor and nourishment.

We started with a homemade tomato sauce, just fresh tomatoes, onions, garlic, herbs, and then transformed it into different dishes:


🥚 Eggs poached in sauce for a hearty breakfast or dinner
🐟 Sardines simmered in for rich protein
🌿 Okra added for fresh veggie goodness
🥩 Canned corned beef stirred in for a comforting, budget-friendly meal


All fairly affordable and accessible ingredients used to create unique dishes all built from one humble sauce. 💛

🌱 Four Flavors of Home 🌱

As a child in the Caribbean, I was blessed with easy access to these four incredible plants, all growing in our backyard:
✨ Curry leaves – nutty, citrusy notes when tempered in hot oil
✨ Lime leaves – aromatic, citrusy perfume for curries and soups
✨ Bay leaves – subtle depth, perfect for slow-simmered dishes
✨ Lemongrass – refreshing, citrusy, and one of my favorites for tea 🍵

I grew up watching my grandmother use them daily, each one transforming dishes in its own way.

Living in the Pacific Northwest now, I don’t have the same easy access but I can sometimes find them in local supermarkets, and more often at ethnic or Asian markets. Every time I bring them home, it feels like reconnecting with my roots.

🍏 From My Grammy’s Backyard to Yours 🍏

These little beauties in my hand are jujubes, also known as red dates or Chinese dates, but if you grew up in 🇹🇹 or the Caribbean like I did, you probably know them as dunks.

A dunks tree grew in my grandmother’s backyard, and as kids, my siblings, cousins, and I made it our mission to fill our bellies with whatever fruits we could get our hands on. From pommerac, shaddock, plums, mangoes, cashews, oranges, West Indian cherries, and of course, dunks, we ate copious amounts straight from the tree. And if Granny’s yard wasn’t enough, we’d “forage” (okay, sneak!) into the neighbors’ yards too.

Here’s the thing though, growing up, I never realized that not everyone back home had access to this abundance of fresh fruit. We weren’t wealthy by any means, but looking back, the bounty in Granny’s yard was something many of my peers had never experienced. I’m thankful someone had the foresight to plant these trees which gave an abundance of fruits every season.

Now, decades later and thousands of miles away, holding these fruits again brings back those sweet, sun-filled memories and reminds me of the privilege of having grown up so close to the land and its gifts.

Ever tasted Jeera Pork? (Geera Pork, as we call it in Trinidad 🇹🇹)

This deeply flavorful dish is built around jeera—the Hindi word for cumin. At Calypso Kitchen, we slow-roast whole cumin seeds on the stovetop, releasing an intoxicating aroma that’s smoky, earthy, and bold. Roasting transforms cumin from a humble seed into the backbone of this unforgettable dish.

We then pair that freshly ground jeera with tender pork belly and our signature Calypso Green Seasoning Marinade, made with:
🪴 Culantro, cilantro, parsley, oregano, thyme, Spanish thyme
