From my Grandmother’s Kitchen to yours.
Some recipes are more than just food—they’re stories, memories, and love passed down through generations. This one is especially close to my heart.
I learned to make this dish standing at my grandmother’s side, watching her turn the humblest ingredients into something deeply nourishing. Green bananas—an ingredient many folks in the U.S. might walk right past—were always a staple in her kitchen. She’d stew them down slowly with fresh herbs, garlic, onions, and warm spices until they transformed into a rich, savory gravy.
There were always variations, depending on what we had on hand or the flavor she wanted to bring out. Sometimes she’d add curry for a bold, fragrant twist. Other times, she’d stir in bacalao/salted cod fried to crispy bits—for a vibrant, briny depth that made the dish sing.
Across the Caribbean, green bananas are used in countless ways. We boil them for salads, blend them into beverages, and cook them down in stews and curries. One of the most common—and comforting—uses? Soups. Saturday soups, whether it was a hearty sancoche or a light fish broth, were always packed with green bananas. They were the grounding ingredient, soaking up every bit of flavor while adding substance to the pot.
While green bananas—often called "fig" in the Caribbean—are beloved throughout the islands, they’re also used around the world. In West African stews, Filipino ginataan, South Indian curries, and Latin American soups, green bananas show up in hearty, home-cooked meals everywhere. It’s amazing how one humble ingredient connects so many cultures.’
It’s simple, it’s soulful, and it’s a reminder of where I come from.
