Something happens to a sauce in the last ninety seconds.
You watch it. You wait. You stop stirring a beat too early or too late and the whole thing shifts. Too thin and it runs off the plate. Too far and it goes tight, grainy, gone.
The reduction I finished last night took almost as long as the braise itself. Six hours on the short rib. Another hour of coaxing w**e, stock, and time into something glossy enough to hold its shape on the plate. When it finally hit the spoon just right — the kind of shine you can’t fake — I knew the dish was done.
That’s the part of private chef work I’d miss if I ever went back to a restaurant line. The room to wait for perfect. No ticket printer. No forty covers stacked behind you. Just the sauce, the spoon, and the patience to know when it’s ready.

Going through chemo — or loving someone who is? Ask the oncology team about protein first.

Duke University published a study in ESMO Open in 2024 that every family in the fight should know about. Fifty patients with stage two through four colorectal cancer, all starting chemotherapy. The ones who ate more protein held onto more muscle and kept more physical function through treatment. Chemo eats muscle — that is one of the cruelest parts. This pilot says the plate can fight back.

Small study, feasibility trial, early days — I won’t dress it up as more than it is. And during treatment, everything goes through the oncology team. But it tells you why medically tailored meals exist: when someone is in the fight, food is not decoration. It is support.
