One of my favorite breakfasts right here. Migas muffins on top of crispy corn tortilla. Served with spinach salad with mexicano vinaigrette. Topped with pomegranate seeds and queso fresco.
Ingredients salsa, cilantro, oregano, corn tortillas (ground and then pan seared for flavor) eggs all baked in muffin cups. Then finished with salsa Rojo, and a herb oil and topped with green onions, cilantro, and queso fresco.
