It’s a festive feeling day off from working the club. So, that means it’s time to get back in the kitchen and come up with some ideas! Good food, good people.

-Crispy Pork Belly; seasoned and crisped pork belly, onion and serrano confit, garlic confit aioli, pomegranate seeds and pickled serrano.

-Steak and Pigs Feet Tacos; medium rare steak, crispy roast pigs feet, asparagus, garlic aioli confit, pomegranate seeds, pickled serrano and Chef Xochilt’s spicy, chili based sauce with soy, pomegranate seeds and green onion.

Comfort food is my kind of food!

-Chicken and Rice; chicken breast heavily seared and pulled from the pan to allow a mirepoix to cook down in butter, deglazing along with a bit of stock and corn starch to become the roux for our rice. Then the chicken and rice are married into the roux and allowed to rest before being topped with fresh green onion, orange bell, and a crunchy mozzarella frico.

Chef and I did some testing in the kitchen at work, today!

-Grouper and Lobster croquettes; minced grouper and lobster combined with fresh ingredients then hand rolled and fried to a perfect golden brown. Plated on a housemade remoulade and garnished with fresh dill and lemon.

Don’t forget that we can do single item orders also!

-Mexican street corn that I prepared for a young child’s “Taco TWOsday!”, themed birthday party. The family had us cater a birthday party and enjoyed the dish so much they asked if we would make it for another! Thanks Amber and family for reaching out and Happy Birthday to your little one! (One plain and one traditional)
