Originally started in June 2011, as Hyden Park Supper Club - Austin's first vegan supper club. HPSC served 9 dinners over the next year - most of them selling out. Chef Elizabeth then moved to Boston for a personal chef position, and later worked at a handful of Boston's top restaurants, including Bondir (Cambridge and Concord), True Bistro (Somerville), and The Beat Hotel (Cambridge). oved back to Austin in 2014, and with her new skills and experiences acquired in Massachusetts, decided to re-start her supper club. Since the supper club would no longer take place in the Hyde Park neighborhood, it was renamed "Roots to Leaves" - a play on "nose to tail". The first Roots to Leaves Supper Club dinner was in January 2015.
