Planning on eating black eyed peas for New Year's ? According to the U.S. Department of Agriculture, black-eyed peas are low in fat, contain no cholesterol, and are low in sodium. They are high in potassium, iron, and fiber and a one-half cup serving of cooked black-eyed peas counts as one ounce of lean meat from the Meat, Poultry, Fish, Dry Beans, Eggs and Nuts Group of the Food Guide Pyramid.

Here's how we like to eat them:

1/2 cup vegetable oil
1/2 cup apple cidar vinegar
3 cloves garlic, minced
1/3 cup chopped onion
1/2 cup chopped celery
1/2 tsp black pepper
3/4 shakes tabasco sauce
2 15.8 oz cans black eyed peas, drained & rinsed
Combined all ingredients except peas. Pour over peas and toss gently.
Can be stored for up to one week.

The most awesome Cranberry Salsa ! (recipe from the bag of cranberries)

1 12 oz bag cranberries
1 bunch cilantro
1 bunch green onions
1 jalapeno pepper
2 limes, juiced
3/4 cup white sugar
1 pinch salt

Combine all in food processor. Chop to medium consistency.
Refrigerate if not using right away. Serve with tortilla chips.
