Back at Eastern Hills, but this time for the women! Preparing for 400 guests tonight! Smoking pulled pork and smoked baked potatoes. My shoulders are tired from scrubbing 400 potatoes last night!

Just sharing my thoughts: Costco Business was out of prime brisket so I grabbed a couple American Wagyu briskets, for a lunch event I had this week. They were around $6.45 per pound. The fat seems to respond differently than prime. It can be a little more difficult to trim if it is not still super cold. The fat also seems to render quicker. I have smoked one before and like that one, these finished with a darker color inside when sliced. There is a more hardy beef flavor to it. Those are the only differences I notice vs prime brisket. Has the same tenderness. It’s cool to say you smoked a Wagyu brisket but not worth the price difference. (In my opinion)
