Dinner parties are a favorite of mine - it is like having your own private resturant in your own home! I do it all so you can just sit back and enjoy those special moments - no rushing around serving or staying up late cleaning up. I am passionate about cooking real food with ingredients that I pronouce and incorporate local produce and ingredients whenever possible. I cook for super busy families that want to build good habits with their kids, individuals that have personal health goals yet are challenged to cook for just one and mature couples that want to keep up their health and understand that it is never too late to stay fit and food is fuel. A delicious and nutritious one pan meal that also becomes the cooking for a delicious quiche!

Well caramelized onions, color bell peppers, fresh kale, and chicken apple sausage all happy together for a cooking meal! Finish it off with some Italian parsley and you are good to go. Serve alone for a low carb option, or with quinoa, potatoes, or rice for a more filling option!

The next morning, whip some eggs, herbs, and milk, add a healthy portion of the sausage pepper mixture, top with parmesan cheese and bake in a GF pie shell! Yum!

Even better when you daughter throws the quiche together, and she baked a side of GF blueberry muffins, she has great taste!

It felt good to be back in the kitchen again after lots of traveling. Preparing some nourishment on this cold and windy Spring afternoon that will last several days and even some for the freezer. Somehow I always end up with a super full pot, I can't seem to make a smaller amount. 😂 Guess it comes from years of making food in large quantities! What do you crave after you have been traveling?

What better way to use up overripe bananas than with this yummy protein GF/DF filled muffin recipe!

1 c. nut butter
2 med. ripe bananas
2 lg. eggs
1 t. vanilla
1 T. chia seeds
2 T. pure maple syrup
1/2 t. baking soda
1 t. apple cider vinegar
1/2 chocolate chips or toasted pecans/walnuts

1. Pre-heat oven to 375.

2. Place all ingredients into a blender except chocolate chips or nuts. Blend until smooth and pour into greased muffin cups.

3. Bake for 10-12 minutes until a tooth pick comes out clean. Cool and enjoy!

Last week I got back in the personal chef saddle and served a client for Valentine's Day. It was a special gathering at their home with some friends and after a year of way fewer chef events, it felt good to be back doing something that will forever be part of who I am. It all comes back, just like muscle memory reminding me of the joy I find in serving others a delicious menu and watching them sink into the time together making beautiful memories.

Prepping ingredients and taking time to make it all sing, is not something I take for granted especially in days like this. I'm grateful to see something special come together at the end of a oh so hard week. Anyone else?

Valentine's Day Menu
Organic Mixed Greens with Honeycrisp Apples, Feta, Candied Pecans, Cider Vinaigrette (this is ridiculously good and would make anyone a salad lover)

Lemon-Herb Grilled Cedar Plank Salmon (cause we like options and cedar plank, say no more)
Grilled Barrel Cut Filet Spiced Rub, Avocado Crème, Grilled Tomatoes (again ridiculous and a party in your mouth)
Rustic Golden Potatoes, Herbs, Parmesan (cause we love carbs especially with herbs and parm)

Dark Chocolate Flourless Chocolate Cake, Fresh Berries, Vanilla Bean-Brown Sugar Whipped Cream (always end with antioxidants, thank you dark chocolate and berries and if you haven't had homemade vanilla bean brown sugar whipped cream you haven't lived)

All that was left was empty pans and bowls because it was that good. This was my offering and it was well enjoyed by all. Even came back home and made my special someone a little extra with a few substitutions (insert grilled peppers and Ceasar salad) because - LOVE.

Tonight's one-pot meal is brought to you with a few ingredients that could all be cooked together and extras used in several ways. Mexican goodness in a pot :) and it feeds a crowd.

Enjoy on a plate with all the fixings and scooped up with tortilla chips - no utensils needed!

Enjoy in a tortilla as tacos, with all the fixings of course.

Or make it a savory breakfast topped with an egg.

1. Brown 1lb or so of ground beef, turkey, chicken, or soy crumbles with a diced onion and minced garlic. Season with salt/pepper until cooked through and onion is soft.

2. Add oregano, paprika, cumin, chili powder, coriander, or whatever you have and mix well.

3. Add 1 c. fresh salsa, 2 c. enchilada sauce (I used green because that is what I had), 1 1/2 - 2 cups of water, 1 1/2 c. rice, 1 can black beans, and 1 can corn. Stir to combine.

4. Simmer for 30-40ish min or until rice is cooked through.

5. Top with cheese, olives, and cilantro (I did half because my husband doesn't like it but I like him 😏)

6. Serve with sour cream, chips, avocado, jalapenos, etc. You get the idea.

I am going to freeze half for later but will enjoy the rest this weekend. Happy cooking!
