「Archive」意為檔案庫，象徵對咖啡風味的紀錄與保存。從咖啡豆挑選、烘焙到沖煮，團隊透過詳實記錄每支咖啡的參數與表現，反覆調整與優化，希望將每款咖啡最理想的風味狀態呈現給飲用者。這樣近乎研究室般的精神，也成為 Greenriver.Archive 最鮮明的特色之一。

空間設計延續品牌一貫的日式簡約風格，融合現代建築語彙，並將場域劃分為義式咖啡、手沖咖啡與烘豆三個區域。開放式的設計讓顧客能近距離感受咖啡從烘焙到沖煮的完整過程，也讓咖啡成為空間體驗的一部分。

Greenriver.Archive, a specialty coffee destination from Taipei’s Nangang district, will join “2026 Coffee & Flower Story.” As the second concept developed by Greenriver Coffee, Archive is built around the philosophy of “finding the purity of coffee within a state of constant movement,” continuously exploring the possibilities of specialty coffee through a thoughtful and systematic approach.

The name “Archive” reflects the brand’s dedication to documenting and refining coffee. From sourcing and roasting to brewing, every coffee is carefully recorded, analyzed, and adjusted to achieve its ideal flavor expression. This research-driven mindset has become one of the café’s defining characteristics.

Designed with a blend of Japanese minimalism and contemporary aesthetics, the space is divided into three areas dedicated to espresso, pour-over coffee, and roasting. The open layout allows guests to experience the full journey of coffee, from roasting to brewing, making the process itself part of the experience.

來自日本青森縣八戶市的 6かく珈琲，今年將首度參與《2026 珈琲與花物語 Coffee & Flower Story》。以「Find the essence.」作為品牌理念，透過炭火自家烘焙咖啡、巧克力與手作菓子，追求食材最純粹的風味本質。

品牌最大的特色，在於堅持以七輪炭火烘焙咖啡。選用無農藥生豆，以傳統炭火細緻控制火候，一次僅能烘焙約 800 克咖啡豆。雖然效率遠不及現代大型烘焙設備，但也正因如此，造就出層次更加豐富、甜感與深度兼具的獨特風味，成為品牌始終堅持的理由。

6かく珈琲所在的空間同樣充滿故事。店鋪位於青森縣八戶市的「小中野新丁地區（八戸・小中野新丁エリア）」，一棟始建於 1895 年、擁有超過 120 年歷史的建築之中。這棟老屋曾歷經海嘯災後重建，從海運產業、旅館到醫院，見證了地方城鎮的興衰與變遷。船舶模型、旅館時代留下的大型廚房，以及醫院時期的藥房痕跡，至今仍靜靜存在於空間之中。

歷經近二十年的空置歲月後，這棟老建築再次以咖啡館的身分迎接人們。對 6かく珈琲而言，咖啡不只是飲品，更是一種與時間、土地與歷史對話的方式。透過炭火烘焙與職人手作，持續將這份來自八戶的溫度傳遞給每一位來訪的人。

Based in Hachinohe, Aomori, Japan, 6kaku Coffee will make its debut at “2026 Coffee & Flower Story.” Guided by the philosophy “Find the essence,” the brand specializes in charcoal-roasted coffee, handcrafted chocolate, and artisanal sweets, focusing on the pure character of every ingredient.

Using pesticide-free green coffee beans, each batch is carefully roasted over a traditional shichirin charcoal stove, creating coffees with remarkable depth, sweetness, and complexity.

Located in the historic Konakano-Shincho district of Hachinohe, the café occupies a beautifully preserved 120-year-old building. Through charcoal roasting and thoughtful craftsmanship, 6kaku Coffee shares the warmth, stories, and spirit of its hometown in every cup.

The brand was founded by Japanese latte art champion and barista Kenta Baba. Originally from Fukuoka, Baba rose to prominence at an extraordinary pace, qualifying for an international latte art competition just five months after beginning his professional barista career. 來自日本福岡久留米的 COFFEE COUNTY，今年將首度參與《2026 珈琲與花物語 Coffee & Flower Story》。創立於 2013 年的 COFFEE COUNTY，不只是精品咖啡烘焙品牌，更是一間深深扎根於產地文化與人文交流的咖啡品牌。團隊相信，一杯咖啡的價值不只來自風味本身，更來自於土地、氣候與生產者所共同孕育出的故事。

品牌創辦人在開業前曾親自前往中美洲咖啡產區長期駐留，於尼加拉瓜咖啡農園與當地工作者一同生活與勞動，從種植、採收到處理流程，深入學習咖啡生產的每個環節。此後更陸續造訪衣索比亞、秘魯、哥倫比亞等世界重要咖啡產區，建立起與眾多咖啡生產者之間長期且深厚的信任關係。

COFFEE COUNTY 長年堅持直接拜訪產地，並以實際走訪過的農園咖啡作為選豆核心。透過經典 Vintage Probat 烘焙機每日進行烘焙，希望將咖啡生產者的個性、土地風土與產區文化，透過純淨而優雅的風味完整傳遞給每位飲用者。

COFFEE COUNTY, a specialty coffee roaster based in Kurume, Fukuoka, Japan, will make its debut at “2026 Coffee & Flower Story.” Founded in 2013, COFFEE COUNTY is more than a coffee roastery—it is a brand deeply rooted in origin relationships, cultural exchange, and the belief that every coffee carries the story of the people and land behind it.

Before opening the roastery, the founder spent several months living and working on coffee farms in Central America, particularly in Nicaragua, learning coffee production from the ground up alongside local farmers. Since then, the team has continued to visit coffee-producing regions around the world, including Ethiopia, Peru, and Colombia, building long-term relationships based on trust and mutual respect.

At the heart of COFFEE COUNTY is a commitment to sourcing coffees directly from producers they have personally visited. Roasted daily on a vintage Probat roaster, each coffee is crafted to express not only flavor, but also the character of its producers, the uniqueness of its terroir, and the culture of its origin.
