No way I'm eating that !!! 🤢
Or so I thought!
Growing up in a blended trini household, curry was often cooked at our home. We all know when we hear curry we think roti and what was the cheapest side to pair with roti back in the day ? Yep, CHANNA !!!
Curry/boiled channa and I aren't friends, I just don't like it! So much so that when I go to the doubles vendor and ask for Bara and sweet suace, if someone purchases doubles for me unknowingly, I will dump the channa and have the Bara only.
I, however, enjoyed good seasoned fried channa, I will eat it until my jaw gets tired 🥴.
As I got older, I came to realize that texture plays an important part in my enjoyment of food, and that the foods I disliked was me actually not liking the way they were prepared and not me disliking that particular ingredient.
Off to Google I went, on a search to discover different ways to prepare foods that were on my least favourite list. That is where I discovered Falafel.
Falafel is a Middle Eastern dish of ground channa/chickpeas/garbanzo beans that is seasoned with fresh herbs and spices, then fried to crisp perfection😋.
It's an excellent option for a passed hors d'oeuvres at any event, whether high-end or casual, a vegan/gluten-free snack, or can be paired with a 🥗/ 🫓 as a sustainable meal.
I've tested and adjusted different recipes to create a product that emphasizes the textures and flavours my customers love and enjoy.
