What a fun dinner! Had an absolute blast playing with recipes, flavors, and plating these courses. Thanks and for creating the menu.

- beet and whipped ricotta salad with pistachios and a citric balsamic glaze
- local mahi mahi ceviche with sweet potato and grilled avocado
- lobster tail on a parmesan-rosemary polenta cake, surrounded by saffron lobster bisque and bok choy with corn relish
- filet mignon with trumpet mushrooms, roasted broccolini, and potatoes al forno

This must be the happiness a sculptor feels revealing to the public for the first time, his muse as it has emerged from chipping away at a block of marble.

This was the kind of challenge I love - different recipe, new flavors, and the freedom to create a beautiful presentation.

Personal Yuzu Cheesecakes, featuring a smooth and creamy filling, graham cracker crumb crust, and deliciously citric yuzu curd on top.
