Eggplant Fatteh 🍆 by Cheffe Wadad 🇱🇧
Fatteh literally means to "crumble" or "tear into pieces" in Arabic, referring to the pieces of toasted pita at the heart of this layered dish. Fatteh was invented as a way to give stale pita a second life. Someone, somewhere, refused to waste good bread, and centuries later we're still thanking them for it. 🍞
It's also a perfect example of a plant-rich, vegetarian dish at the heart of Mediterranean and Levantine cuisines for generations: vegetables, legumes, olive oil, grains and nuts create meals that are nourishing, healthy, generous and full of flavour, with no meat needed.
Cheffe Wadad's version layers roasted eggplant simmered in tomato sauce, topped with a garlicky yoghurt tahini sauce, fried pita bread and toasted pine nuts and almonds. Soft, crispy, creamy, tangy, warm: the kind of food that feels like it belongs in the middle of a family table, with everyone reaching for another spoonful.
