One of the things I miss and crave from South Africa is a chicken mayonnaise toasted sandwich. The mayonnaise from South Africa is a bit more acidic and sweet. After a few trials and getting other South Africans to try it. This recipe got the thumbs up. Luca almost licked the jar clean. This takes about a minute to make. I use a a mason jar and a stick blender for less mess and easy storage. It doesn’t keep for more then 4 days as it is fresh egg. Saying this it always gets used up in 3 days at home.

What a lovely group of ladies Amazing Graze had over for the Algarve cooking workshop. Lots of laughs and learning. We accomplished: Basic Portuguese grazing board for starter, seafood cataplana for main and a lemon tart for dessert. Not to mention the wonderful wines from . I love my job
