This recipe is for those who love gingery aroma. I love the flavor of fried or roasted ginger which enhances the taste of chicken. This is not the Thai version but a Kerala style chicken fry and is inspired by the chilly ginger chicken fry or perattu popular in my native place.I just tried different version by adding lots of ginger. It tasted delicious as a side dish for rice.

Ingredients
Chicken boneless- 1 lb
Chilly powder- 1 1/2 tsp
( add according to your taste)
Turmeric powder- 1/2 tsp
Coriander powder- 1 tsp
Garam Masala/meat masala- 3/4 tsp
Ginger finely chopped- 3-4 tsp
Thinly sliced shallots- 2-3
Mint leaves - a few
Curry leaves
fennel seeds- a pinch
mustard seeds
oil-2 tsp
salt to taste


Cut chicken into small pieces and marinate with chilly powder, coriander powder, turmeric powder,garam masala and salt and keep aside for half an hour.Pour one tsp of oil in a pan and add curry leaves and mint and then the chicken. Close the lid and cook in a low flames. The chicken will shed its own water and cook. Stir occasionally till completely cooked. ( If the chicken gets dry you can sprinkle a few drops of water.
Heat a little oil in a pan and add mustard seeds and fennel seeds. Next add ginger and shallots fry till golden brown and mix this with the cooked chicken. Stir fry for two more minute till all the masala gets well coated.


Ginger Prawns fry

I tried the same recipe with prawns. But here the cooking time is less and you need not precook the prawns. You can add marinated prawns to the ginger mixture and fry.

Green Masala Chicken Roast

Green masala chicken roast is delicious chicken busting with flavor.The masala is inspired by the Goan green chicken curry and is cooked like the Kerala chicken roast.Chicken is marinated and cooked in a fresh green masala paste of coriander,mint, green chilly and is shallow fried. It is a dry version and is great accompaniment with rice, chapathi or fried rice. Try this,you will surely love it.

Ingredients
1)Chicken - 1 1/2 lb
Turmeric powder-1/2 tsp
Thin coconut milk- 1/2 cup
Salt to taste

To make the green masala paste
Coriander leaves- chopped- 1 1/2 cup
Mint leaves- a hand full
Ginger - 2 inch thick peice
Garlic- 8-10 pods
Green chilly- 5-6
( adjust according to taste)
Black pepper whole- 1 tsp


Powdered Garam masala
Fennel seeds- 2 tsp
Cloves-5-6
Cinnamon - 2 peices
Star aniseed- 2
Cardamon- 3

To saute
Thinly sliced Onion- 2 medium
Ginger thinly sliced- 1 inch thick piece
Garlic- 4-5
Coriander powder- 1/2 tsp
Pepper powder- 1/3 tsp(optional)
Thick coconut milk- 1/2 cup
Lemon juice- 1/2 lemon
Coriander leaves
Salt to taste
Dry roast the ingredients under garam masala and make a fine powder.

Make a fine paste of all ingredients listed under 'green masala'.Clean and cut chicken and marinate with this green masala,turmeric powder and salt and keep aside for about an hour.

Cook this marinated chicken with half cup of thin coconut milk till the chicken is cooked and all the water gets absorbed . Heat oil in a pan and shallow fry the chicken pieces till it is slightly crispy in the outer and set aside.

Heat oil in a pan and saute ginger and garlic till there is a nice aroma followed by onions and fry till the onions become golden brown. Add coriander powder and pepper powder and the roasted garam masala and fry for a minute. Now add the fried chicken and stir till all the masala is well coated. Add the thick coconut milk and mix well. Fry for three till it is completely dry and the masala gets well coated over the chicken. Squeeze lemon juice and garnish with some fresh coriander leaves.Serve with rice, appam or chapati.

Malabar Chicken Curry

This chicken curry is one of our family favorites. It is a great accompaniment with ghee rice,pathiri or parotta. Chicken is slowly cooked in a rich gravy of crispy fried onions,coconut and cashew nut paste. Try this,you will surely love it.

Ingredients
1)Chicken - 2 lb
Turmeric powder- 1/3 tsp
Salt - a pinch
Pepper powder- 1/3 tsp
lemon juice-1/2 lemon

For the gravy
Thinly sliced onion- 3 medium
Tomato-2
Ginger garlic paste-2 tbs
Turmeric powder- a pinch
Chilly powder- 1 1/2- 2 tsp
(adjust according to taste)
Coriander powder- 1 1/2 tsp
Thick coconut milk- 1 cup
Thin coconut milk-2 cup
Cashew nuts- 8-10
Whole garam masala- cinnamon stick one inch peice-3
Cardomon-2, clove-5,star aniseed-1
Curry leaves - a few

Clean chicken,wash and drain and marinate with ingredients listed under (1) for about 10 minutes.
Soak cashew nuts in warm water for some time and make a fine paste.

Heat a little oil in a pan and add onions and salt and saute and fry till crispy. Add tomatoes and saute till the tomatoes are soft and cooked. Allow this to cool and make a coarse paste of this mixture.

Heat one tsp of oil and add the whole spices and saute till there is a nice aroma. Add curry leaves and after a minute ginger garlic paste and saute till raw flavor disappears. Now add the ground onion paste and simmer till it is reduced and oil separates. Add chicken and mix well. Continue mixing and frying the chicken for about five minute till the chicken turns pale. Add the thin coconut milk cover the lid and cook till the chicken is almost cooked. Add cashew nut paste and simmer for another two to three minutes, Finally add thick coconut milk and simmer for a minute and switch off the flame. Enjoy with ghee rice, pathiri or chapati.

Chicken drumsticks- 4-5

1) Ginger garlic paste- 2 tsp
Whole red chilly-8-10
( Or two tsp of Kashmiri chilly powder
Add as per your tolerance )
Turmeric powder- 1/4 tsp
Coriander powder- 1/2 tsp
Garam Masala- 1/2 tsp
Fennel powder- 1/2 tsp
Pepper powder- 1/3 tsp( optional)
lemon juice- a few drops
Rice flour-1/2 tsp(optional)

2)Butter milk- 1 cup
Salt
Pepper powder- 1/2 tsp


3)Sliced onion- 1 medium
Sliced ginger- 1 inch thick
Left over chicken marinade
Curry leaves



Clean and pat dry the chicken drumsticks( remove the skin) and make two or three gashes. Mix the ingredients listed under two with chicken and keep in refrigerated for at least an hour . Take out the chicken and discard the buttermilk marinade.( this helps to make the fry juicy in the center but if you are short of time you can avoid this step and follow the rest of the recipe)

Mean while remove the seeds of the dry red chilly and soak it in a little warm salt water for half an hour. Grind this into a fine paste along with ginger and garlic and a spring of curry leaves. Mix all the other ingredients listed under one and marinate the chicken for two hours. Just before frying sprinkle rice flour.Pour oil,approximately 1 1/2 cup in a pan and heat it to medium high temperature and carefully drop in the chicken. First fry in high and then reduce the heat to low medium. Fry on one side for about four to five minutes and then turn around and continue to fry till done and till it is nice and crispy.
Mix together all the ingredients listed under three and fry them in the same oil that you used to fry the chicken. Arrange this on a plate and place the chicken on top. You can drizzle a few drops of lemon juice before serving.

Heat oil in a pan and add cloves and whole pepper and slightly roast. Now add ginger, garlic and curry leaves and fry till there is a nice aroma. Add onions and when slightly brown add turmeric powder and chicken. Stir fry in medium flame for two minutes. Add pepper powder and salt and half a cup of water and close the lid. When the chicken is cooked and all the water is absorbed add lemon juice and coriander leaves and mix well.

Ingredients

Soya sauce- 3 tsp
Salt a pinch

2)For the batter
Egg- 2
Corn starch-2 tbs

3)For the sauce
Water - 3/4 cup
( or you can use chicken broth)
Sugar- 3-4 tsp
Salt- 1/2 tsp
Lemon juice- 1 lemon
Lemon zest- 1 tsp
Corn starch- 1 tsp
Yellow color- one drop( optional)

Sesame seeds roasted - 1 tsp
Chopped spring onions - a few

Clean and cut chicken into small pieces and marinate with soya sauce and pinch of salt and keep aside for ten minutes.
Mix the ingredients under two and make a batter. Heat oil in a pan. Dip the marinated chicken in the batter and deep fry in batches for four to five minutes till it is crispy and golden brown. Drain into paper towels and keep aside.
Mix all ingredients listed under three into a sauce pan and put it in medium flame, stir and allow it to simmer and thicken. Place the chicken in a serving dish and drizzle the sauce all over the chicken. Sprinkle roasted sesame seeds and chopped spring onions. Serve with jasmine rice.

Chicken fried rice is simple and quick and can be served as lunch or dinner.Add in stir fried vegetables,chicken and eggs and drizzle a little of soya sauce and a filling meal is ready -a delicious twist to left over rice.Soya sauce, chilly garlic sauce or oyster sauce can be added according to taste.Here I used soya and oyster sauce and a dash of pepper.

Ingredients
Cooked rice- 3 cups
Boneless chicken- 1/2 lb
Egg-2
Soya sauce dark-a few drops
Soya sauce - 2 tsp
Vinegar- 1 tsp
oyster sauce- 1 tsp
Pepper powder- 1/2 tsp
Onion-1/2 small onion
Garlic- 4 pods
Spring onion chopped- 1/3 cup
Chopped vegetables- 3/4 cup
( here I have used carrots,celery,bell pepper)
Corn starch- 2tsp


Cut chicken into bite size pieces. Combine soya sauce, and vinegar.Pour half of this into the chicken along with pepper powder and corn starch and marinate this for ten minutes. Pour two tsp of oil in a pan and stir fry this chicken till it turns white and cooked through.
In the same pan stir fry all the vegetables starting with onion, and after a minute add carrots and fry for two minutes and finally toss celery and bell pepper for a few seconds and keep this aside.
In a hot pan add a little oil and add minced or finely chopped garlic and stir for a few seconds and add eggs. Cook and scramble the eggs and add in chicken vegetables, remaining soya sauce mixture, dark soya sauce, oyster sauce and pepper powder. Mix well and add rice and spring onions. Fry rice for one more minute. Fried rice is ready.
