Craft tradition with your own hands and celebrate flavor, culture, and creativity in the kitchen 🥮✨

During The Mid Autumn Festival Mooncake Making Workshop held last Saturday August 2 2024, passionate home bakers and food lovers came together for a hands-on deep dive into one of the most iconic Chinese pastries. Led by Chef Catherine Blas Yu, the class explored the rich stories and time honored techniques behind crafting mooncakes from scratch.

Participants learned to create three delicious varieties including the elegant Traditional Cantonese Mooncake, the flavorful Shanghai Savory Mooncake, and the intricate Teochow Mooncake while gaining expert tips on fillings, dough, shaping, and traditional design.

Chef Annalisa Margarita Mariano will be teaching our HAPAG HIMAGAS: FILIPINO DESSERTS & PASTRIES this August 30, 2025!

Chef Annalisa, MBA, DEd, is a seasoned culinary educator with a rich background in both the food industry and academia. She currently serves as Program Director and Assistant Professor at Ateneo de Manila, and as Chef Instructor at Le Cordon Bleu Ateneo. Her extensive experience includes R&D and consulting roles with Selecta-Unilever, Domino’s Pizza, and the Miguel Maria Group.

She has also taught internationally in France and holds advanced degrees from Miriam College and UP Diliman, along with professional training from CCA Manila and the French Culinary Institute in New York. With her global perspective and deep roots in Filipino cuisine, Chef Annalisa brings both innovation and authenticity to every class she leads.

Golden with Dark Dip
Recipe by Chef Heart Cadiente

Golden Churros
1 cup water
2 tablespoons sugar
2 tablespoons unsalted butter
¼ teaspoon salt
1 cup MAYA All Purpose Flour
2 eggs
½ teaspoon vanilla extract

Sugar
½ cup caster sugar
1 teaspoon cinnamon powder
Pinch of nutmeg

1. In a saucepan, combine water, sugar, butter and salt. Bring to a boil.
2. Turn off heat and immediately stir in the flour until a dough forms.
3. Allow dough to cool slightly, then beat in the egg one at a time until smooth and glossy.
Lastly, stir in vanilla. Transfer dough to a piping bag fitted with a star tip.
4. Heat oil in a frying pan or deep pan to 175°C (350°F). Make sure oil is about 1-2 inches deep.
5. Pipe 4–6 inch strips into the oil, using scissors to cut the dough.
7. Fry in batches until golden brown, about 2–3 minutes. Set churros on a plate or colander
lined with paper towels to remove excess oil.
8. Combine sugar, cinnamon powder, and nutmeg in a bowl.
9. Toss churros in cinnamon sugar while still warm.

COOKING TIP: If using a plastic piping bag, use two bags to ensure that it does not burst. The dough is thick and heavy and will require a strong but gentle pressure when piping.

Dip
½ cup dark chocolate chips or pieces
1 ¼ cups all-purpose cream
1 tablespoon unsalted butter
½ teaspoon vanilla extract
¼ teaspoon salt

In a sauce pan, combine dark chocolate, all-purpose cream and butter. Heat until chocolate is completely melted then add vanilla and salt. Serve churros with dark chocolate dip.

Born in Jolo, Sulu and inspired by his mother and late grandparents, who were cultural advocates and educators, he honors Moro history through food, education, and storytelling.
