Four days to go before Sun Moon Pavilion officially opens—and today’s featured dish is one that truly shows the hand of the chef.

This is our Signature Pagoda Braised Pork Belly.

Creating its striking pagoda form takes exceptional knife skills, patience and hours of careful molding. Only then is the pork belly slowly braised until every layer becomes tender and deeply flavorful. Served with delicate sesame-topped buns, it gives guests another delicious way to enjoy the pork belly and its rich sauce.

This is not something you see on just any menu, truly a rare find in Pampanga — and one of Executive Chef Max Wang’s seven signature creations at Sun Moon Pavilion.
