Crunchy meets creamy! Crispy Pork Kare-Kare na nakakagana!
🧂 Ingredients:
🐖 For the Crispy Pork:
• 1 kg pork belly (liempo) or lechon kawali cut
• Salt and pepper to taste
• 4 cloves garlic (crushed)
• 1 bay leaf
• Water for boiling
• Oil for deep frying
🥜 For the Kare-Kare Sauce:
• 1/2 cup peanut butter (or more for creamier texture)
• 1/4 cup ground toasted rice (optional for thickening and flavor)
• 1 tbsp annatto seeds (atsuete) soaked in 1/4 cup hot water (for color)
• 4 cups pork broth or water
• 1 onion, chopped
• 4 cloves garlic, minced
• Salt or patis to taste
🥬 For the Vegetables:
• 1 bundle sitaw (string beans), cut into 2-inch pieces
• 1 medium-sized eggplant, sliced
• 1 banana heart (puso ng saging), sliced and boiled(optional)
• 1 bundle pechay or bok choy
🥣 For Serving:
• Bagoong alamang (sauteed shrimp paste)
