Imagine a savory, incredibly thin, and ultra-crispy chip that is loaded with crunchy peanuts. That is the easiest way to picture Rempeyek Kacang (commonly called Peyek for short), the famous Indonesian peanut cracker.
​Unlike thick potato chips or puffy rice crackers, peyek looks like a thin, wild, lacy disc of fried batter with whole or halved peanuts scattered across the surface.

👉​The Batter: Instead of wheat flour, it is made with a watery mixture of rice flour + tapioca flour and coconut milk. This combination is what makes it so incredibly light, airy, and crisp rather than heavy or doughy.
