this new recipe was created on request from a customer who is newly diagnosed with diabetes and wanted to treat herself with a healthy treat for Christmas!
She asked for a small raw berry 'cheesecake' with a cashew base, a vanilla 'mousse' layer and a berry 'mousse' layer and a berry compote on top and she is not a fan of cacao so there you have it!
