Hi everyone,

Today is the day! I am now the face of Cake Wellington. Officially Let's Eat Cake Wellington, but I'll respond to either. I also respond to Cake Lady, Magic Cake Lady, and You With The Butter Icing On Your Face.

I think you mostly all know about me, but just in case. I moved to Wellington from the UK in Jan 2024. I actually spent much of my childhood in NZ, but went travelling after Uni and ended up in the UK for almost 20 years. Oops. I've been a baker since 2014, when I set up a cafe with a friend of mine. That business (originally The Cake Tin - slightly named in honour of our lil stadium!) has morphed many times over the years, but since 2018 I've been a fulltime cake maker.

After a stint working at Little Green Olive in Paremata for the past year, I'm finally getting my cake making kit out again and can't wait to start baking for the people of Welly.

Please do bear with me while I get back into the swing of things. I'm taking it relatively slowly while I work out how to use a new oven, the speeds on my new mixers, and where the cheapest place is to buy butter!!! The updated website and online shop are now up and running at letseatcakewellington.co.nz but if you find a glitch in either, please don't abandon me. Just give a shout and I'll fix it.

I'll be merging this page with the cakewellington page soon, but for now I'm here, so stick around and you'll see what I'm up to.

With all the legal, banky, website, accounting, spreadsheety stuff I need to do before I officially launch on 1st July, there hasn't yet been much time for fun this week, but here's a little cake made for a photoshoot earlier today. She's was so pretty... Then smooch... The cake met my face. Tee hee. I'm so excited to share the real photos with you soon, but right now I'm off to wash the butter icing out of my hair 😆

Hello to my wonderful new followers, and howdy doody to all my loyal lovelies. Lots and lots of stuff happening behind the scenes at the mo to get Let's Eat Cake up and running.

Keep an eye here for more info. I'm so close to launching fully. You'll very soon be able to get your teeth into all the delicious cakey goodies.

For now I'm getting my baking gear back out after a much longer rest than originally planned!

Hello hello you lovely Malvern folk. How the heck are you all? Sorry for the radio silence.

I'm alive and well down here at the bottom of the world. We're settled in Wellington and loving NZ life. The Cake Tin NZ is on hold for a wee while as we renovation/rejuvenate our new house. All my energy is being expended knocking down walls, sanding, painting, pulling up carpets, sewing up curtains, and generally trying to live surrounded by dust sheets and rubble! Do you like my new green kitchen?

I'm working in a wee coffee shop (in a recycled shipping container... super cool), which is keeping me busy too, and fully caffeinated ready for all the DIY.

Here are a few snaps of our Welly beaches and the view from our living room 🙂 Apparently it's not always such glorious weather in winter, but I'm certainly enjoying it.

And they're not lying when they say it's the shaky isles! Just last night we were jolted awake. It's still weird but we're getting more used to it.

I hope you're all doing well. I really do miss you all. Life just isn't the same now that every knock at the door isn't someone collecting cake! 🫤 Sending lots of delicious love to you all ###

Well this is it folks, the annual Elf photo, and my last post as The Cake Tin Malvern. Eeek.

I can't thank you all enough for following me on this crazy ride for the past few years. To everyone who has ordered a cake directly, eaten a slice at a wedding or party, taken cupcakes to school or work or a baby shower, or hen do, enjoyed a trip to Abbey Road Coffee and Commandery Coffee for amazing coffee and a yummy cake, and to every single person who has ever liked or shared a post, or recommended me to a friend, thank you, thank you, thank you. Tiny businesses like mine couldn't succeed without wonderful folk like you. I will truly miss you all.

Keep an eye on this page as it will probably morph into the next iteration of The Cake Tin... and if you know anyone in New Zealand, especially Wellington, tell them I'm coming their way!

Well folks, you kept me busy baking for much much longer than I originally planned, but on Saturday to final cakes left The Cake Tin kitchen.

For all those eagerly awaiting recipes, I promise they're coming. I've been so busy in the kitchen, I haven't had time to write them all up. I've decided instead to do it in January... Hopefully sitting in the sunshine with a glass of something refreshingly crisp and fruity by the keyboard!! Keep an eye on here and I'll let you know when things are ready to purchase.

I'll pop back on with the annual elf photo at some point this week, but for now I'll leave you with these delicious Seasons greetings and wish you all lots of festive cheer 🎄

Last year this birthday girl chose a bee theme, so I couldn't resist adding a few bees into the design too.

I've been asked a lot over the past few weeks if I'll share my recipes and cakey secrets when I leave.

After lots of thought about whether, and how, I could do it, I've decided to create a selection of recipe 'cards'. You'll be able to buy as many as you want once I hang up my apron, and enjoy making The Cake Tin faves forever. What a way to keep the cakey love alive.

So far I'll be doing carrot cake, chocolate cake, lemon and poppy seed cake, and Biscoff cake.
