A different take on classic cheesecake:
I used almond butter and almond meal in this one, for a slightly caramel flavour and grittier texture. Then I added some pureed roasted rhubarb and orange and the rest of the puree will be served over the cheesecake so the tartness cuts through the richness.
This poor baby bounced all the way down to Auckland in the chilly bin with only minor cracking!
