The Mighty Brisket Toastie.

This one goes way back.

It was our very first food truck menu item. In fact, long before we had a food trailer it was making regular apparences when we were popping up under our trusty gazebo.

It may have been our first menu item, but it’s certainly stood the test of time and remains one of our most popular food truck offerings.

Our Pork Belly Burger is 150 grams of tender low & slow pork belly, pickled red cabbage with a soft chili kick, cheese, and smoky chipotle mayo on a toasted bun.

We’re super excited to be making our first food truck visit to Brewaucracy - Brewery & Taproom this Sunday!

We’ll be on deck firing out the barbecue goodness from 1pm…..and we’ll be featuring a couple of brand-new menu items, including our wintery Brisket Chowder and fried bread!

We’re fired up to be back with our good mates at Oak Eatery for another food truck pop-up this Friday, 22nd May!

We’ll be firing barbecue from the trailer, while the team at Oak keep you refreshed and provide the perfect spot to grab a seat, enjoy your food, and ease into the weekend.

We’ll have a couple of Smokin’ Oak classics on the menu, plus some brand-new items we’re excited to share with you — and we’ve even got a couple of kid-friendly options for the young ones too.

What am I paying for here - quantity or quality?

We got asked this at a local pop-up earlier this year. Fair question - and not one we hear often.

The honest answer? It’s both.

Quality is always the starting point.
We’re proud of what we serve, and if it’s not something we’d happily put in front of friends and family, it doesn’t make the menu.

At the same time, we don’t believe anyone should leave a barbecue hungry. Whether it’s a food truck item or a buffet, portions are designed to properly satisfy!

And there’s a third piece to it as well - the craft.

Low and slow barbecue takes time. Our meats are cooked over many hours on an offset smoker, managed by hand the whole way through. It’s a full-day process of tending the fire, monitoring, and looking after each cut as it cooks.

So while the short answer might be “quality,” there’s a bit more behind it than that.

At the end of the day, it’s about serving food we’re proud of - done properly & with care.
