Preserved Lemons

It's that time of year when the lemons are just giving so treat yourself to this simple trick to have on your shelf for a welcome addition to any salad , Tagine or fish dish.

METHOD

Cut Lemons into Quarters but not all the way through and rub with sea salt place in a sterilized jar , top with a little boiling water and leave for Six weeks.

Chef Ryan was gifted a pumpkin and the team had a cook off beautiful deconstructed pumpkin cheese cake, pumpkin panchetta and parmesan Wafer soup, pumpkin bread and the tastiest of pumpkin hummus with kumera chips and a pumpkin whip with Balsamic very tasty team.

Great addition to any cheese platter line a tray with grease proof paper cover with grated parmesan a little pepper and bake until it bubbles allow to cool and use as a parmesan Wafer.
