vour will be prepared à la minute on the spot, using liquid nitrogen to freeze the ingredients to nearly -200° (-196° to be precise). This rapid freezing results in a luscious, smooth and creamy texture without the usual grainy ice crystals. They call it molecular gastronomy. We prefer to use the name ‘Glace á la Nitro’ [ ], or in Dutch [ ].
