1. Prepare the Rice: Rinse the basmati rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming too sticky. Soak the rice in water for about 30 minutes, then drain.
2. Heat the Oil: In a large pot, heat the vegetable oil or ghee over medium heat.
3. Cook the Onions: Add the chopped onions to the pot and sauté until they are golden brown. This caramelization process is crucial for adding depth of flavor to the pilau.
