Ginger Bread
Ingredients:
• All-purpose flour – 2½ cups (310g)
• Baking soda – 1 tsp
• Baking powder – 1 tsp
• Ground ginger – 2 tsp
• Ground cinnamon – 1 tsp
• Ground cloves – ½ tsp
• Salt – ¼ tsp
• Brown sugar – ½ cup (100g)
• Molasses (or honey) – ¾ cup (180ml)
• Butter – ½ cup (115g), melted
• Egg – 1 large
• Warm water – 1 cup (240ml)
• Fresh grated ginger – 1 tbsp (optional, for stronger flavor)
Instructions:
Preheat oven to 180°C (350°F) and grease or line your 8x8 inch square pan with parchment paper.
In a large bowl, combine flour, baking soda, baking powder, ginger, cinnamon, cloves, and salt. In another bowl, whisk melted butter, brown sugar, egg, and molasses until smooth. Gradually add warm water and mix well.
Pour the wet mixture into the dry ingredients and stir gently until just combined—don’t overmix. Add fresh grated ginger if using.
Pour batter into the prepared square pan and smooth the top. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
Let the ginger bread cool in the pan for 10 minutes before transferring to a wire rack. Serve warm or dust with powdered sugar before serving.
