BANGA SOUP
Banga soup is a popular delicacy found in Nigeria.It is prepared from palm kennel fruits and common mostly in the South South and south Eastern part of the country. Banga soup is best eaten with starch, eba and fufu.
Ingredients for preparing banga soup includes but not limited to the following: Palm kennel fruits, ground crayfish, stock fish, meat,fresh prawn, smoked fish, special banga spices, vegetables like pumpkin (ugwu), seasoning cubes, salt to taste, red scotch pepper and periwinkle.
To prepare banga soup, wash and boil the palm kennel fruits for about 30 minutes, extract the oil from the palm fruits by pounding and boil the extract until there is no oil. If you areb the busy type and dont have time for pounding, you can get the concentrated extract from the market though i will personally recommend the fresh palm kennel fruits. After boiling the extract for the period of time, add the already cooked stock fish and meat, pepper, crayfish, vegetables and other ingredients as mentioned earlier. Reduce the amount of heat and allow the soup boil for a little while. Then comes your banga soup ready to be served with any of the starch, eba or fufu depending on your choice.
