1. Do not open oven until your cake rises well to avoid shrinking and falling inside after baking.
2. It is advisable to stir your cake mixture in one direction, in a folding manner when adding the flour, stirring in the opposite direction traps in air bubbles in the cake mix which will make it have hole after baking.
3. The cake is done when it separates from the pan. Also cake is done when you dip a toothpick/knife into the cake and it comes out neat with no wet cake batter on it .

Tips on cakes preservation :
It will be useful to those of you who are passionate about being cake experts.
1. If you are to bake a fruit cake soak the fruits ahead of time.
2. Always use lemon zest for your cakes.
3. Add rum/brandy or dried preservatives.
4. Allow cakes to cool down completely before icing.
5. Avoid too much flavor and don't exceed egg required in a recipe.
