How to make home made Chicken Pie

Ingredients
For the Dough:
4 cups all-purpose flour
200g butter or margarine (cold, diced)
1 tsp baking powder
½ tsp salt
Cold water (as needed, about ½ cup)

For the Filling:
300g minced or shredded cooked chicken
2 medium Irish potatoes (peeled and diced)
2 medium carrots (peeled and diced
1 small onion (diced)
2 tbsp vegetable oil
1 seasoning cube
Salt and pepper (to taste)
1 tbsp flour (to thicken)
½ cup water

Procedure

Prepare the Filling
In a pot, heat the oil and sauté the onions until translucent.
Add the diced carrots and potatoes. Stir for 2 minutes.
Pour in the water, seasoning cube, salt, and pepper. Let it cook until the veggies are tender.
Add the shredded or minced chicken.
Mix 1 tablespoon of flour with a little water, then pour into the mixture to thicken it.
Let it simmer for a few minutes, then turn off the heat and allow to cool.

Prepare the Dough
In a bowl, mix flour, baking powder, and salt.
Add diced butter and rub into the flour until it looks like breadcrumbs.
Gradually add cold water and knead until you have a soft, non-sticky dough.
Cover and let the dough rest for about 10-15 minutes.

Assemble the Chicken Pie
Roll out the dough on a floured surface to about ½ cm thickness.
Cut into rectangles or circles, depending on your preferred pie shape.
Scoop some filling onto one side of the dough.
Fold over and seal the edges using a fork.
Place on a greased or lined baking tray.
Brush the top with egg wash for a golden finish.

Bake
Preheat oven to 180°C (350°F).
Bake the pies for 30–35 minutes or until golden brown.

Ingredients

3 cups (375g) all-purpose flour

½ cup (100g) sugar

½ tsp salt

1 tsp baking powder

½ tsp nutmeg (optional, for flavor)

¼ cup (60g) unsalted butter, softened

1 large egg (optional, for a richer taste)

½ cup (120ml) evaporated milk or water

Vegetable oil (for frying)

Instructions

Prepare the dough
In a large bowl, mix flour, sugar, salt, baking powder, and nutmeg. Add the butter and rub it into the flour until crumbly. If using an egg, mix it in.

Form the dough
Gradually add the milk or water while kneading until a smooth, non-sticky dough forms. Let it rest for 10–15 minutes.

Cut into shapes

Ingredients

- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup buttermilk (at room temperature)
- 1/2 cup vegetable oil
- 2 large eggs (at room temperature)
- 2 teaspoons vanilla extract
- 1 cup hot water

For the Frosting
- 1 cup unsalted butter (softened)
- 3 1/2 cups powdered sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup buttermilk (at room temperature)
- 2 teaspoons vanilla extract
- Pinch of salt

Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Add the buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until combined.

Gradually add the hot water to the batter, mixing well until smooth. The batter will be thin, but that's okay.

Ingredients (Makes about 8 rolls)

For the dough:

All-purpose flour (or bread flour) – 3 ½ cups (440g)

Instant yeast – 2 ¼ tsp (1 packet)

Sugar – ¼ cup (50g)

Salt – 1 tsp

Warm milk (about 110°F or 45°C) – ¾ cup (180ml)

Warm water – ¼ cup (60ml)

Unsalted butter, softened – ¼ cup (55g)

Large egg – 1

For the egg wash:

Egg yolk – 1

Milk – 1 tbsp

Instructions

Activate the yeast (If using active dry yeast)
Mix warm milk, warm water, and sugar in a small bowl. Sprinkle the yeast over the top, stir, and let it sit until foamy (about 5–10 minutes).

Mix the dough
In a large bowl or stand mixer, combine the flour and salt. Add the yeast mixture (or instant yeast if using). Add the egg and softened butter. Knead for about 8–10 minutes (by hand or with a dough hook) until the dough is smooth and elastic. If the dough is too sticky, add a little flour (1 tbsp at a time).

First rise
Place the dough in a greased bowl, cover with a clean cloth, and let it rise until it doubles in size (about 1–1.5 hours).

Shape the rolls
Punch down the dough and divide it into 8 equal pieces. Roll each piece into a log about 6 inches long. Place them on a parchment-lined baking sheet, leaving some space between them.

Second rise
Cover and let them rise again until puffy (about 30–40 minutes).

Egg wash and bake
Preheat oven to 375°F (190°C). Mix the egg yolk and milk, then brush it over the rolls for a golden finish. Bake for 15–18 minutes or until golden brown.

Nigerian-Style Coconut Bread

Ingredients

2 cups all-purpose flour

1 cup grated coconut (fresh or desiccated)

1/2 cup sugar (adjust to taste)

1 tbsp baking powder

1/4 tsp salt

2 eggs

1 cup coconut milk (or regular milk)

1/3 cup melted butter or vegetable oil

1/2 tsp nutmeg (optional)

1 tsp vanilla extract

Instructions
Preheat your oven to 175°C (350°F). Grease and flour a loaf pan or line it with parchment paper.

In a large bowl, combine flour, grated coconut, sugar, baking powder, salt, and nutmeg.

In another bowl, whisk together eggs, coconut milk, melted butter (or oil), and vanilla extract.

Pour the wet ingredients into the dry mixture. Stir until just combined — don’t overmix.

Yummy Puff Puff Recipe

Ingredients:

2 cups (250g) all-purpose flour

1 tsp instant yeast

½ cup (100g) sugar

¼ tsp salt

½ tsp nutmeg (optional but tasty)

1 ¼ cups (300ml) lukewarm water

Oil for deep frying

Instructions:

In a mixing bowl, combine flour, sugar, salt, nutmeg, and yeast.

Gradually add lukewarm water while mixing until you get a thick, smooth batter. The batter should be stretchy and not watery.

Cover the bowl with a clean towel or plastic wrap. Let it rise in a warm place for about 45 minutes to 1 hour, or until doubled in size and bubbly.

Heat oil in a deep pot (about 2–3 inches deep). Once hot (about 350°F / 175°C), scoop the batter with your hand or a spoon and drop it gently into the oil.

Fry in batches, turning occasionally, until golden brown on all sides. This should take about 4–6 minutes per batch.

Remove and drain on paper towels. Serve warm as-is or dust with powdered sugar for extra sweetness!
