✅️ Confused about what to make for breakfast this weekend? Here's an easy yet rich and typical breakfast served in most Nigerian Homes, ''A COMBO OF MOI MOI AND PAP(OGI/AKAMU) OR CUSTARD''

INGREDIENTS FOR MOI-MOI📌
✅️ Dry Ingredients
3 cups of beans, ½ cup of blended Crayfish, Seasoning cubes, Salt
✅️ Wet Ingredients
Tatashe or Shombo, Scotched bonnet pepper, ½ cup of veg oil, 3 boiled eggs (optional), 1 bulb of Onions, 1 sachet tomato paste
STEPS FOR PREPARATION📌📌
✅️ Soak the beans for some minutes and wash until the outer coating peels off, then sieve off the water.
✅️ Slice the Shombo or Tatashi and remove the seeds (the seeds will make your moi moi bitter) and Onions.
✅️ Blend the beans, shombo or tatashi, scotch bonnet pepper, already cut onions, crayfish until you have a smooth paste. Add 3 cups of water to the mixture in the blender before you blend.
✅️ Turn the paste into a clean bowl Add 4 seasoning cubes, salt to taste, groundnut oil and tomato paste. Then, stir in the added ingredients with a spatula until it blends into the your paste and is evenly mixed.
✅️ Distribute the mixed paste evenly into small moi moi plates, leaves, nylons or foils. Add sliced boiled eggs into each portion.
✅️ Add water to a clean pot. Arrange sticks in vertical and horizontal pattern inside the pot and place the moi moi plates/ leaves/ foils or nylons into the pot. The sticks protects your rubber plates from melting as a result of heat and also prevents your nylon, leave or foil wrapped mixture from being submerged and soggy by the time you're done cooking.
✅️ Cover the pot tightly and cook for 30-50 mins till your moi-moi is done. When its done, allow to cool and serve it with custard.
