*Recipe for smooth crunchy peanut*
Groundnut--3cups
Flour-750g
Eggs-4
Baking powder-1½teaspoon
Sugar--1cup
Flavor-1teasp
Milk--2tbs (optional)
*Procedure*
When you want to get a well done groundnut inside your peanut, you wash your groundnut, add little salt and sun dry very well before making use of it.
Due to the raining season we are, I advice we fry our groundnut or buy already fry ones to use( reason been that so the groundnut inside won't be half done and you don't need to fry it to brown before removing it). After frying the groundnut, peal the back and remove the broken ones, set aside.
In another bowl, sieve your flour (750g) add baking powder (1½teaspoon).
Note: you can also make it without baking powder but the size won't be really big because baking powder serve as a raisin agent. Mix the flour and BP together.
In another bowl, break in your eggs and whisk to be foamy.
Then add your sugar (1cup), Flavour (1ts),milk (2tb).
Note: If you are using power milk you dilute it with water before measuring it into the egg. Whisk well till it's foamy and creamy.
In the bowl, pour in your groundnut, add two spoon( normal eating spoon) of the egg mixture and mix, not with hand but be shaking the groundnut bowl in a clockwise direction after some seconds add in your flour, just a hand full and please sprinkle the flour not on one place oo. Be fast about it so the groundnut won't stick to the bowl.
Keep turning and just be adding two spoon each of your egg and sprinkle the flour, till your 750g of flour and 4 eggs is finish, then you allow it to rest for 15 mins before frying it on a low heat.
Allow the oil to hot before putting in your peanut. How to know if your oil is hot, drop one of the peanut and give it some seconds if it comes up then the oil is hot and ready to fry.
*NOTE* Don't allow your peanut to be brown in the oil once you see it have started changing to cream colour remove it, cos when it get cool, it will bring out the brownish colour.
