Kid's friendly 'Snake gourd cooked in coconut milk'.
So easy to make and nutritious too! Snake gourd is an natural antibiotics as it's rich in Vit A, B, C, Potassium, Magnesium, Calcium, Iodine and Iron. It's an expectorant and a healthy laxative too. Known to be a 'cooling' vegetable for the body too.
One of Shivaa's favourite dish!
Here's the recipe for this yummy dish.
Ingredients:
4 sticks of snake gourd, cleaned and cut into small pieces
1 onion
2tbsp Ginger garlic paste
1 tomato chopped
1 tsp mixed spices 'fennel, cumin, mustard seeds and fenugreek'
Handful curry leaves
Half cup fresh coconut milk
Handful of chopped coriander leaves
To make:
Heat oil and temper the spices
Add the curry leaves then onion and saute till the onion turns translucent
Add ginger garlic paste and saute for 2m then add in the tomatoes, mix and add in the chopped snake gourd, 1 tsp of turmeric and saute.
Add half cup of water, mix, cover and cook till the snake gourd is cooked through.
One it's done, add coconut milk, once it boils, add some salt, stir and switch off the stove and sprinkle the coriander.
Done!
Serve with some hot rice or even Chapati!
I even take a scoop of it before I add in salt, to feed my 10m baby.
He loves it too! Keeps looking at his bowl to see if it's finishing! 😂
