Wait, why is there a “vegetarian” label on my cheese? 🥦

Aren’t all cheese vegetarian? Milk is vegetarian, right?

Yes cheese are mainly made up of milk, and milk is vegetarian. But there is one ingredient that comes in some cheeses which is not 😲

To make cheese, the cheese-maker have to curdle the milk, to eliminate a lot of moisture, and keep the proteins and fat. This can either be done thanks to microbial fermentation, in the exact same way yogurt is made, or with an enzyme, called Rennet.

And this is where the non-vegetarian ingredient comes into play! Rennet is a digestive juice from a baby cow’s fourth stomach (yes they have more than one stomach ;) )

Some rennet are now produced from microbial sources, which is vegetarian, but for the traditional way of making cheese, no, it’s not vegetarian.

If you’re worried about animal welfare 🐄, then better look twice!

But if you’re concerned by animal’s environmental impact ✈️, don’t worry much because rennet is only used up to 0.04% of milk mass.

How to make a great cheese platter? 🤷‍♀️

You want to make a cheese board to impress your friends you invited for a dinner? 🍽️

Wait, before throwing random cheeses on the board, make sure you actually have a wide selection to make the experience more interesting and enjoyable. 👐

When selecting cheeses for your platter, aim for variety. Choose cheeses with different textures, flavors, and milk types (cow, goat, sheep). A good rule of thumb is to have a mix of soft, semi-soft, hard, and blue cheeses. Examples might include brie (soft), gouda (semi-soft), aged cheddar (hard), and Roquefort (blue).

Do you know where roquefort’s blue mold come from?

The cheese maker who follow the tradition are not using commercial mold starter. Instead they are baking rye bread 🫓, almost burnt, and leave it few days for the blue mold to grow from the inside.

Then they sprinkle a bit of this bread as a powder once the cheese wheel have been shaped, on its surface.

And from now, the mold can happily start eating the cheese and develop these beautiful flavors 😋

What are these veins in blue cheese? Is it normal? 🤨

You may see from time to time blue veins in blue cheese. And in fact not always, it depends on the cheese and how is was made.

The blue you see, is an edible mold growing on the cheese, and providing all the flavors, creaminess and piquant taste that we know from blue cheese.

And to grow, this mold needs to breath - like us - 🫁 … Well, not exactly, but it needs air for sure. If the cheese is left to age on its own, the blue mold would only grow on the surface, as you can see it with the mold on Brie, or Camembert.
So to introduce the mold inside the cheese maker is piercing 🪡 the cheese to let air flow in and out.

But that’s not all. After the mold have grown enough, the cheese is crumbled apart and reshaped in a wheel to introduce even more mold inside. 🧀

So, yes it is totally normal to see blue veins, and simply the result of the cheese maker’s art! 👩‍🎨

How would you integrate Indian breads in cheese tasting party? 🧀

Usually sourdough bread, or the famous French baguette 🥖 are going well along with any cheese. This is another example of “What grows together, goes together”. Both baguette and cheese are a very important cultural signature of France 🇫🇷.

However in Malaysia sourdough bread is not the easiest thing to find…

But thanks to the Indian influences 🇮🇳, breads like chapati, roti canai, naan are very common.

And actually chapati and sourdough bread both usually include whole wheat flour, which gives a nice roasty and nutty smell. 👃

So why not eating your next cheese slice with chapati?

Yesterday we mentioned a popular saying when it comes to food pairings.

To illustrate the saying “What grows together, goes together” here are some examples to help your understand and get more creative next time you come across a regional food

- Parmesean and Balsamic vinegar, both from northern Italy.
The Balsamic vinegar adds a touch of sweetness to balance the saltiness of a beautifully aged Parmesan, while adding an extra hint of tanginess.
- Roquefort and the sweet wine Sauternes, both from south-west of France.
Here we go a bit more towards the extremes, the very sweet taste of Sauternes will also balance the saltiness and piquant taste of Roquefort, in addition of bringing a floral and fruity taste.

How to pair Asian condiments with European cheeses? 🧀

While the saying “What grows together, goes together” is a great helper to come up with pairings…

… It’s not the only way to make great pairings.

You can get creative! Look for instance:

- The Chinese Hoisin sauce can pair beautifully well with the orange Mimolette cheese. 🇨🇳 🇫🇷
The sweetness of the Hoisin sauce will enhance the natural caramelly taste of Mimolette, while bringing an extra tang that the cheese doesn’t have.
