GUACAMOLE RECIPE FOR 60
10 kg = ~42 AVOCADOS, ripe
1 kg = ~12 LIME, juiced, yield ~400 ml (1 1/2 cup)
1 Tbl LIME ZEST
1 kg = ~9 TOMATOES, peeled, seeded and fine chopped, yield ~500 ml (2 cup)
200 g = 1/2 RED ONION, fine chopped, yield 200 ml (2/3 cup)
1 bunch CILANTRO, remove stems, medium chop leaves, yield 400 ml (2 cup)
40 g = 2 HABANERO CHILI, pureed with 2 Tbl lime juice, yield 3 Tbl
40 g = 2 clove GARLIC, pureed with 2 Tbl lime juice, yield 3 Tbl
2 Tbl SEA SALT
1 Tbl BLACK PEPPER, fresh ground
PREPARATION
Mash, but do not puree AVOCADOS, add LIME JUICE, ZEST, TOMATOES, RED ONION and CILANTRO.
Add half the SALT and taste. Add more if needed.
Add half the BLACK PEPPER and taste. Add more if needed.
Add half the HABANERO and taste. Add more if needed.
Add half the GARLIC and taste. Add more if needed.
Add a few avocado pits, sprinkle the GUACAMOLE with a little LIME JUICE and cover tightly.
Keep in refrigerator. Eat Immediately. With Chips, Carrot Stix or Jicama!
