August always feels like a little pause between the chapters.

A moment to look back at the summer — at what grew, what surprised us, what changed us, and perhaps what no longer belongs where we are going.

Maybe that is something worth celebrating too — not only birthdays and anniversaries, but the seasons of our lives.

If Gozo had a flavour - Kunserva would be one of them 🍅♥️

Kunserva is Malta’s traditional sun-dried tomato paste, made for generations to preserve the abundance of ripe summer tomatoes.

Every July, when the Mediterranean sun is at its strongest, fresh tomatoes are seasoned, and spread into thin layers to dry naturally under the sun. Traditionally, families would leave trays on their rooftops, bringing them in each evening and returning them to the sun the next day. The process takes several days, patience, and plenty of sunshine.

The result is a rich, silky tomato paste with an intense sweetness and depth.

Kunserva is a staple of Gozo picnic kitchen. Spread it on fresh ftira, stir it into sauces, or enjoy it with a drizzle of local olive oil.

It’s one of those simple ingredients that tells the story of the island.
Because discovering Gozo isn’t only about the places you visit… it’s about the flavours you enjoy and memories you take home with
