A The Beautiful Obsession: Crafting Our Christmas Menu

Creating our Christmas Menu is a year-long affair, driven by a deep love for the season and an obsession with every detail.

We focus on balancing beautiful ingredients we can find in abundance with things that are a little harder to find. It’s a challenge of flavour and logistics, and flavour always wins.

The Process: Countless hours of research, supplier begging, moodboarding, recipe testing, some epic disasters, and friendly dinner parties later, we have a menu.

I am profoundly proud of our Christmas menu. While all your favourite Christmas flavours are there, I reigned back on the overkill. When your guests gather, your warmth, hospitality, and love should shine.

My Promise: Each dish is spectacular, ingredients are chosen with intention, and flavour reigns supreme. Your guests will be very, very happy.

A stalwart on our menus for a reason. 🫜 🍃 🧀

Earthy Roasted Beets, Pickled Fennel, Fresh Herbs, Salty Feta over a bed of Mixed Greens & Rocket. One of my personal faves, this salad or some version of it is a permanent fixture on our menus.

As we put the final flourishes on our Christmas menu I continue to experiment and dress this salad in so many different ways.

Prawns, Brown Butter & Hazelnuts. This is quite truly the star of our new menu. Everyone has been loving it, and I’m finding myself incorporating brown butter and hazelnuts into so much more.

As October winds down I am pretty much already in Christmas mode. Tbh I was planning Christmas three months ago 🙄 I mean is there a reason to not ?

Potatoes are one of my love languages. The one addition to your meals that everyone is likely to take a little bit of, but with us we know they are going in for seconds.

These days you have been loving our Golden Roasted Potatoes with Herbs and Almonds: perfectly crisp, fluffy inside, and given main-event treatment we love to add grassy, earthy and fresh herbs and finish with toasted, sliced almonds. It’s a texture, colour, and flavour experience that proves this staple can be a showstopper.

The Magic of a Shared Meal

I was chatting with a friend last week, and she told me one of her favourite moments is sitting around a full table with the people she loves. I couldn’t agree more.

Sharing a meal with friends is a special thing. It takes a little effort and preparation, but we never regret it, do we? This is the feeling I’m always thinking about when I create a menu: what will draw people in, encourage them to linger a little longer, and share their time and love?

A roast chicken dinner does just that. It’s familiar, comforting, and perfect for passing around the table. Juicy chicken, crisp potatoes, plenty of gravy, and maybe some bread on the side—it’s a recipe for good food, great company, and lots of laughs.

A culinary whisper from one island to another: our Jerk Fish. This dish is not just joining our new menu - it’s leading the dance.

Our home made Jerk Spice rub is added to locally sourced Barramundi and grilled to a hairline from burning. It is then finished with a scotch bonnet relish.

Each bite is a beautifully tender and flaky mouthful followed by a fiery kiss of spice and smoke

A sneak peek at our Reimagined Waldorf Salad.

Forget the mayo-laden, green-apple-and-cashew version of the past - this is Waldorf 2.0

Crisp greens, cinnamon smoked bacon, celery, apples, cranberries, and a homemade pumpkin seed & walnut brittle with a light, citrusy yoghurt dressing.

Born from my clients’ love of fruit in salads (and a little internet inspiration), I’ve put my own twist on it for the perfect crunch-meets-freshness bite and I think your going to love it. 🙏🏼
