Oven-roasted Pork Medallions
Rubbed, seared, and perfectly roasted, these Pork Medallions offer soft, tender, juicy, and savory meat in every bite
You will need:
2 to 3 pounds pork loin
1 tablespoon olive oil
For the dry rub:
1/2 teaspoon brown sugar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon chili powder
1 teaspoons salt
1 teaspoons paprika
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
1 tablespoon olive oil
For the honey garlic sauce :
3 tablespoons honey
3 tablespoons butter
3 cloves garlic, minced
2 teaspoons low sodium soy sauce
2 teaspoons rice wine vinegar
1/2 teaspoon black pepper
How tp make it:
โ In a small bowl, combine all dry rub ingredients and mix thoroughly then set aside.
โ Pat dry pork loin with paper towel. Season thoroughly with the mixed dry rub
โ In a large pan or skillet over medium heat, heat 1 tablespoon of olive oil. Sear pork until golden brown on all sides, rotating the pork around to avoid burning. Remove seared pork loin from skillet and transfer to a baking dish. Set aside.
โ Preheat oven to 375ยฐF.
โ Melt butter on the same pan, scraping up left over bits . Add garlic and sautรฉ for one minute until fragrant. Stir remaining sauce ingredients and bring to a rapid simmer for one minute. Pour sauce over pork loin thoroughly coating every sides.
โ Bake for 45 minutes. Uncover and continue baking for another 10 to 15 minutes or until the meat registers 145ยฐF at the thickest part. Remove from the oven and let sit, loosely covered, for 5 to 10 minutes to allow flavors to blend in.
โ Slice pork loin against the grain about 1/2 to an inch thick. Drizzle with the honey garlic butter sauce drippings from the baking dish, if desired.
