Oven-roasted Pork Medallions

Rubbed, seared, and perfectly roasted, these Pork Medallions offer soft, tender, juicy, and savory meat in every bite

You will need:
2 to 3 pounds pork loin
1 tablespoon olive oil

For the dry rub:
1/2 teaspoon brown sugar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon chili powder
1 teaspoons salt
1 teaspoons paprika
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
1 tablespoon olive oil

For the honey garlic sauce :
3 tablespoons honey
3 tablespoons butter
3 cloves garlic, minced
2 teaspoons low sodium soy sauce
2 teaspoons rice wine vinegar
1/2 teaspoon black pepper

How tp make it:
โ–  In a small bowl, combine all dry rub ingredients and mix thoroughly then set aside.
โ– Pat dry pork loin with paper towel. Season thoroughly with the mixed dry rub
โ–  In a large pan or skillet over medium heat, heat 1 tablespoon of olive oil. Sear pork until golden brown on all sides, rotating the pork around to avoid burning. Remove seared pork loin from skillet and transfer to a baking dish. Set aside.
โ–  Preheat oven to 375ยฐF.
โ–  Melt butter on the same pan, scraping up left over bits . Add garlic and sautรฉ for one minute until fragrant. Stir remaining sauce ingredients and bring to a rapid simmer for one minute. Pour sauce over pork loin thoroughly coating every sides.
โ–  Bake for 45 minutes. Uncover and continue baking for another 10 to 15 minutes or until the meat registers 145ยฐF at the thickest part. Remove from the oven and let sit, loosely covered, for 5 to 10 minutes to allow flavors to blend in.
โ–  Slice pork loin against the grain about 1/2 to an inch thick. Drizzle with the honey garlic butter sauce drippings from the baking dish, if desired.
โ–  Enjoy your every bite of it.

๐Ÿฅฉ 1. Classic Steak Sauce
Ingredients:

1/2 cup beef broth

1/4 cup heavy cream

2 tbsp Worcestershire sauce

1 tbsp Dijon mustard

1 tbsp butter

Salt & pepper

Instructions:

1. Heat butter in a pan over medium heat.

2. Add beef broth and simmer for 3โ€“4 minutes.

3. Stir in Worcestershire sauce and Dijon mustard.

4. Add cream and cook until slightly thick.

5. Season with salt and pepper. Serve over steak.

๐Ÿฅฉ 2. Peppercorn Sauce

Ingredients:

1/2 cup heavy cream

1/4 cup beef broth

2 tbsp brandy (optional)

2 tsp crushed black peppercorns

1 tbsp butter

Salt

Instructions:

1. Melt butter in a pan.

2. Add peppercorns and toast lightly.

3. Add brandy (carefulโ€”may flame).

4. Pour in broth and simmer 2โ€“3 minutes.

5. Add cream and cook until thickened.

๐Ÿฅฉ 3. Mushroom Sauce

Ingredients:

1 cup sliced mushrooms

1/2 cup beef broth

1/2 cup cream

1/4 cup chopped onion

2 tbsp butter

Salt & pepper

Instructions:

1. Melt butter, sautรฉ onions until soft.

2. Add mushrooms and cook until browned.

3. Pour in broth and simmer 5 minutes.

4. Add cream and cook until thick.

5. Season and serve.

๐Ÿฅฉ 4. Garlic Herb Butter Sauce

Ingredients:

3 tbsp butter

4 garlic cloves (minced)

1 tbsp rosemary (chopped)

1 tbsp thyme

1 tbsp parsley

Salt & pepper

Instructions:

1. Melt butter on low heat.

2. Add garlic and cook until fragrant (not burnt).

3. Stir in herbs.

4. Season and spoon over steak.

๐Ÿฅฉ 5. Balsamic Glaze Sauce

Ingredients:

1/4 cup balsamic vinegar

2 tbsp brown sugar

1 tbsp soy sauce

1 tsp Dijon mustard

1/2 tsp garlic powder

Instructions:

1. Combine all ingredients in a saucepan.

2. Simmer on low heat until thick and glossy (5โ€“7 min).

3. Let cool slightly before serving.

๐Ÿฅฉ 6. BBQ Steak Sauce

Ingredients:

1/2 cup BBQ sauce

2 tbsp ketchup

1 tbsp apple cider vinegar

1 tbsp brown sugar

1 tsp smoked paprika

1/2 tsp Worcestershire sauce

Instructions:

1. Mix all ingredients in a pan.

2. Simmer for 5โ€“6 minutes.

3. Adjust sweetness or tang if needed.
