Mahamri Recipe
"Soft, golden, and kissed with cardamom – meet Mahamri."
A Swahili coastal treasure made with coconut milk and warm spices.
Perfect with chai, mbaazi, or just on its own

Who else grew up breaking these open to check if they puffed up nicely? 😋



Ingredients:
-3 cups all-purpose flour
-1 cup coconut milk (fresh or canned)
-1/4 cup sugar (adjust to taste)
-1 tsp cardamom powder
-1 tsp instant yeast
-1–2 tbsp vegetable oil or butter
-Pinch of salt
-Warm water as needed
-Oil for deep frying

Instructions:
Mix flour, sugar, yeast, cardamom, and salt.
Add coconut milk and knead into a soft dough. Use warm water as needed.
Cover and let it rise until doubled (1–2 hours).
Roll out and cut into triangles or squares.
Fry in hot oil until golden brown and puffed.
Serve warm—best with mbaazi ya n**i or masala chai!

Golden fries tossed in a rich tomato-onion masala sauce, loaded with flavor and heat.

Ingredients:

-3–4 large potatoes (or frozen fries)
-1 onion, sliced
-2 tomatoes, chopped
-1 tsp tomato paste (optional)
-2 cloves garlic, crushed
-1 tsp ginger (optional)
-1 tsp garam masala
-1/2 tsp paprika or chili powder
-Fresh coriander
-Salt to taste
-Oil for frying

Instructions:

-Fry your chips until golden and set aside.
-In a pan, sauté onions in a little oil until soft.
-Add garlic, ginger, and tomatoes. Cook down until saucy.
-Stir in tomato paste, masala, chili powder, and salt.
-Add a splash of water if it gets too thick.
-Toss in the fries and mix well to coat.
-Garnish with coriander and serve hot!

Ingredients:
For the Chocolate Sponge (3 layers):
-1 cup all-purpose flour
-½ cup unsweetened cocoa powder
-1 tsp baking powder
-½ tsp baking soda
-¼ tsp salt
-4 eggs
-1 cup granulated sugar
-½ cup vegetable oil or melted butter
-½ cup buttermilk (or ½ cup milk + 1 tsp vinegar)
-1 tsp vanilla extract

For the Cherry Filling:
-1 cup pitted cherries (fresh, canned, or frozen)
-2 tbsp sugar
-1 tbsp cornstarch
-¼ cup cherry juice or water

Optional: 2 tbsp Kirsch (cherry liqueur)
For the Whipped Cream Frosting:
-2 cups heavy whipping cream (chilled)
-¼ cup powdered sugar
-1 tsp vanilla extract
-Toppings (optional but classic):
-Chocolate shavings or curls
-Whole cherries (for decoration)

Instructions:
1. Make the Chocolate Cake Layers:
-Preheat oven to 175°C (350°F). Grease and line two 8-inch round pans.
-In a bowl, sift flour, cocoa, baking powder, baking soda, and salt.
-In another bowl, beat eggs and sugar until fluffy. Add oil, buttermilk, and vanilla.
-Fold in the dry ingredients gently.
-Pour into pans and bake 25–30 mins. Cool completely, then slice each into 2 layers if thick enough (for 3 layers, use 1.5x recipe or slice carefully).

2. Prepare Cherry Filling:
-In a saucepan, combine cherries, sugar, and cornstarch.
-Add juice or water and cook over medium heat until thickened (3–5 mins). Stir in Kirsch (if using). Let cool.

3. Make Whipped Cream:
-Beat chilled cream, powdered sugar, and vanilla until stiff peaks form. Keep chilled.

4. Assemble the Cake:
-Place first cake layer on a plate. Brush with cherry syrup or Kirsch.
-Spread whipped cream, then spoon some cherry filling.

-¾ cup warm milk

-1 egg
-¼ cup unsalted butter, softened

For the Filling:
-½ cup brown sugar (packed)
-2 tbsp ground cinnamon
-¼ cup unsalted butter, softened

For the Cream Cheese Glaze (optional but amazing):
-100g cream cheese, softened
-2 tbsp butter
-½ cup powdered sugar
-½ tsp vanilla extract
-1–2 tbsp milk (adjust for consistency)

Instructions:
1. Make the Dough:
-In a bowl, mix warm milk, warm water, sugar, and yeast. Let sit for 5–10 mins until foamy.
-Add egg and butter, then gradually add flour and salt.
-Knead the dough until soft (about 8–10 minutes).
-Place in a greased bowl, cover, and let it rise for 1–1.5 hours or until doubled.

2. Prepare the Filling:
-Mix brown sugar and cinnamon in a bowl.
-Roll out dough on a floured surface into a rectangle (about ¼ inch thick).
-Spread softened butter all over, then sprinkle the cinnamon-sugar mix.

3. Roll and Cut:

Peas Pilau Recipe
Ingredients:
-2 cups long-grain rice (e.g., basmati), rinsed and soaked for 20 minutes
-1½ cups green peas (fresh or frozen)
-1 large onion, sliced
-2–3 garlic cloves, minced
-1-inch piece of ginger, minced
-2–3 tbsp cooking oil or ghee
-1 tsp cumin seeds
-1 tsp whole black pepper
-1 tsp ground coriander
-1 tsp ground cumin
-1 tsp garam masala or pilau masala
-½ tsp ground cinnamon (optional)
-2 bay leaves (optional)
-1 stock cube (beef/vegetable) or salt to taste
-4 cups hot water or broth
-Fresh coriander (for garnish)

Instructions:
1. Sauté Onions:
In a large sufuria or pot, heat oil over medium heat. Add sliced onions and cook until golden brown – this adds deep flavor.

2. Add Spices & Aromatics:
Add cumin seeds, black pepper, bay leaves (if using), garlic, and ginger. Stir for a minute until fragrant. Then add ground cumin, coriander, cinnamon, and pilau masala.

3. Add Peas:
Stir in the green peas and cook for 2–3 minutes. If using fresh peas, simmer a bit longer.

4. Add Rice:
Drain the soaked rice and add it to the pot. Stir to coat the rice evenly with the spices.

5. Add Water & Cook:
Add 4 cups of hot water or broth and the stock cube. Stir, bring to a boil, then reduce heat to low. Cover tightly and simmer for about 15–20 minutes, or until the rice is cooked and liquid absorbed.

6. Fluff & Serve:
Turn off the heat. Let sit covered for 5 minutes, then fluff with a fork. Garnish with fresh coriander.

Serving Suggestions:
-Serve with kachumbari or a simple salad.
-Pair with beef stew, nyama fry, or a boiled egg for a full meal.
