🍰 Luxurious Black Velvet Fudge Cake 🍫
Ingredients:
- 2 cups granulated sugar
- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1/4 cup black cocoa powder
- Fresh berries for garnish
Instructions:
1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a large mixing bowl, stir together sugar, flour, cocoa powder, baking powder, baking soda, and salt.
3. Add eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes.
4. Stir in boiling water (batter will be thin). Pour evenly into the prepared pans.
5. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Cool for 10 minutes, then remove from pans to wire racks to cool completely.
6. For the fudge frosting, heat the heavy cream in a small saucepan until just boiling. Pour over semi-sweet chocolate chips in a bowl and stir until smooth. Allow to cool slightly.
7. In a large mixing bowl, beat the butter until creamy. Gradually add powdered sugar and black cocoa powder, beating until well blended.
8. Add the cooled chocolate mixture to the butter mixture and beat until smooth and glossy.
9. Spread the frosting between the layers, over the top, and around the sides of the cake.
10. Garnish with fresh berries before serving.
