Another Tasty Tuesday

Beef Wet Fry Recipe (Serves 6–8)

Ingredients
1 kg beef, cut into bite-sized cubes
2 large onions, sliced
3 ripe tomatoes, chopped
1 tbsp tomato paste (optional)
4 cloves garlic, minced
1-inch piece ginger, grated
2 green chilies (optional)
2 tbsp cooking oil
2 cups beef stock or water
1 tsp black pepper
1 tsp paprika
1 tsp curry powder (optional)
1 beef stock cube (optional)
Salt to taste
Fresh coriander (dhania), chopped

Method
Place the beef in a sufuria with 1 cup of water and a little salt. Boil until the meat is tender. Keep the remaining stock.

Heat oil in another sufuria and fry the onions until golden.

Add garlic and ginger and cook for 1 minute until fragrant.

Add tomatoes and tomato paste. Cook until they soften and form a thick sauce.

Stir in black pepper, paprika, curry powder, and the stock cube.

Add the cooked beef and mix well.

Pour in the reserved beef stock (or more water) until you reach your desired gravy consistency.

Simmer for 10–15 minutes, allowing the flavors to combine.

Taste and adjust the salt.
Garnish with chopped coriander and serve hot.

Chef's tip: For richer flavor, marinate the beef for 30 minutes with garlic, ginger, black pepper, paprika, and a little oil before cooking. Slow simmering also makes the beef more tender and the gravy more flavorful.

Coconut Beans Recipe (Serves 10 People)
Ingredients
1 kg cooked beans (red, yellow, or kidney beans)
400 ml coconut milk
2 medium onions, finely chopped
3 tomatoes, chopped
2 cloves garlic, minced
1-inch piece ginger, grated
2 tbsp cooking oil
1 green capsicum (optional), diced
1 tsp curry powder
½ tsp turmeric
Salt to taste
1 cube beef or vegetable stock (optional)
Fresh coriander, chopped
Method
Heat the oil and fry the onions until soft and golden.
Add the garlic and ginger, then cook for about 1 minute.
Stir in the tomatoes and cook until they soften into a thick sauce.
Add the curry powder, turmeric, stock cube (if using), and capsicum. Cook for 2–3 minutes.
Add the cooked beans and stir well to coat them with the sauce.
Pour in the coconut milk and mix gently.
Simmer on low heat for 10–15 minutes, stirring occasionally, until the sauce becomes creamy.
Season with salt to taste.
Garnish with chopped coriander and serve hot.
