Difference between baking soda and baking powder in simple points:

1. Ingredients

Baking Soda: 100% sodium bicarbonate.

Baking Powder: Contains sodium bicarbonate + acid (like cream of tartar) + a drying agent (like cornstarch).

2. Reaction Requirement

Baking Soda: Needs an acid (like lemon juice, vinegar, yogurt) to activate and produce gas (bubbles).

Baking Powder: Already contains acid, just needs moisture and heat to activate.

3. Taste

Baking Soda: Can leave a bitter/soapy taste if not balanced with acid.

Baking Powder: Neutral in taste when used properly.

4. Use in Recipes

Baking Soda: Used when the recipe has natural acids (like buttermilk, cocoa powder, or yogurt).

Baking Powder: Used when there’s no acid in the recipe.

5. Strength

Baking Soda: 3–4 times stronger than baking powder.
Baking Powder: Milder than baking soda.

*AN OPEN LETTER*

Dear beloved supporters,

I am overwhelmed with gratitude as I write this letter to express my deepest thanks to each and every one of you who has donated to my GoFundMe campaign. Your generosity has been a beacon of hope and a reminder that I am not alone in this journey.

As of today, we have raised an incredible $4,210usd on GoFundMe, $1,000usd through other sources of donation, and $250usd from other fundraisers, bringing our total balance to $5,460usd. While we still have a way to go to reach our goal of $10,000, every single contribution counts, and I am so grateful for your support.

Your donations will make a significant difference in my upcoming surgery and recovery. With your help, I will be able to focus on my health and well-being, knowing that some of the financial burdens are being lifted. Your kindness and compassion are a testament to the goodness in the world, and I am honored to be the recipient of your generosity.

I also want to extend my heartfelt thanks to those who have volunteered their time, prayers, and support to help with my fundraisers. Your efforts have not gone unnoticed, and I am grateful for your dedication and kindness.

As I look ahead to the next two months before my surgery on September 12, 2025, I am reminded that we still have work to do to reach our goal. I am humbly asking for your continued support and encouragement. If you are able to give more, please consider making an additional donation. Every dollar counts, and every bit helps.

I also want to ask that you continue to share my fundraisers with your networks, as every share can make a difference. If I have any upcoming sales or promotions, please consider purchasing from me, as every sale counts. I will be doing things in small increments, and every bit of support will help me manage this journey.

Your love, support, and generosity mean the world to me. Thank you for being part of this journey with me. I am so grateful for each and every one of you.

With heartfelt thanks and appreciation,

Debra "Debs 💕" McKessey

WAH GWANN in DI KITCHEN? SOCIAL MEDIA'S BIG IMPACT ON JAMAICAN FOOD CULTURE

Imagine walking into a Jamaican kitchen, surrounded by the aromatic flavors of jerk seasoning, the sweet scent of festival frying in oil, and the sound of reggae music playing in the background. That's the vibe we're feeling when it comes to social media's influence on Jamaican food culture. From Instagram to YouTube, Facebook to TikTok, Jamaicans are sharing their favorite recipes, cooking techniques, and food experiences with the world.

In Jamaica, social media is more than just a platform for sharing food pics - it's a way to preserve and promote our cultural heritage. Traditional recipes like jerk chicken, ackee and saltfish, and curry goat are being shared and celebrated online. Food creators are getting creative, showcasing their own twists on classic dishes and inspiring others to try new flavors. "Wah gwaan in de kitchen?" is no longer just a question about what's cooking - it's a call to action, inviting everyone to join in on the culinary fun.

Take, for example, the rise of jerk chicken recipes on social media. From spicy jerk marinades to creative jerk-inspired dishes like jerk chicken wraps and salads, Jamaicans are getting innovative with this classic flavor. And it's not just about the recipes themselves - it's about the stories behind them, the culture, and the people who make them. Social media is allowing Jamaicans to share their love of food with the world, and the response has been overwhelming.

But social media's impact on food culture isn't limited to Jamaica. Globally, platforms like Instagram and YouTube are driving food trends, creating new opportunities for food entrepreneurs, and democratizing food culture. Anyone can share their recipes, cooking techniques, and food experiences, and connect with audiences worldwide. It's a culinary revolution, and Jamaica is right at the heart of it.

So, what's cooking in your kitchen? Are you whipping up a batch of festival, or slow-cooking a pot of curry goat? Share your favorite Jamaican recipes and cooking tips with the world, and join the conversation about food, culture, and community. Let's celebrate the flavors, traditions, and people that make Jamaican food culture so unique and delicious. Wah gwaan in di kitchen? Let's get cooking!
