Autumn flavours have arrived at Ocean Restaurant.

Our new A La Carte Menu is now being served, with Executive Chef Will Holland bringing the season to the table through Jersey produce and richer autumnal flavours.

Diver-caught Jersey scallops with celeriac, apple and confit pork belly; tallow-crusted venison loin with chanterelles, choucroute, mulled w**e-poached pear and bitter chocolate; and grilled Jersey sea bass with Jersey lobster tortellini and locally foraged sea succulents.

Alongside these are Jersey oysters, crab arancini and freshly hand-rolled tagliatelle, with a choice of autumnal desserts to follow.

On Friday 27 November, we welcome Ch*****ne Taittinger for an evening of rare w**es and exquisite food.

Executive Chef Will Holland has created a menu featuring lobster, truffle, caviar and venison to complement a selection of Taittinger’s classic and more unexpected cuvées.

Today marks the start of Jersey’s Delicious Dine Out Festival.

For the next two months, Ocean Restaurant is taking part with a special three-course menu at £65 per person.

It’s a chance to sit down at Ocean, take your time over dinner and explore a menu created especially for the festival, with the gardens and outlook over St Ouen’s as your backdrop for the evening.

Delicious Dine is a fabulous event that every year brings the food community of Jersey together and offers a wonderful opportunity to try somewhere new or return to a favourite.

On World Tourism Day, we wanted to reflect on what responsible tourism means to us.

It means looking after the place that looks after us. Buying locally where we can. Working with Jersey producers who share our values. Protecting the gardens and coastline around us. Reducing what we use and waste. And supporting projects that restore and protect nature beyond the hotel.

The Atlantic has been part of Jersey for more than 50 years and being here comes with a responsibility to look after what makes this place special.

Jersey crab.
Dry-aged steak.
Butter-roasted salmon.
Hand-rolled pasta.
Finished with an elegant chocolate or berry dessert.

Exceptional food, a beautiful setting, excellent drinks and the kind of service that makes an evening feel like an occasion. All in all, a very good reason to go out this autumn.

At Ocean Restaurant, our sourdough is made with spelt soaked in locally brewed Liberation IPA. The butter is made by hand with Jersey Dairy cream, crystals of Jersey sea salt and seaweed foraged by our chefs from the bay, just minutes from the kitchen.

The recipe took years to develop and has become one of our signature dishes. It epitomises so much of what we value here: good ingredients from close to home, carefully made by hand, with patience, precision and a great deal of care.
