I have to admit that before coming to Italy I had never hand made pasta. Cooking is a labour of love, and the Italians know this well. It does take quite a bit of time and practice to get it right, which makes it that much more special when shared.

A lovely vegetarian dish from Puglia:
Healthy, filling and delicious !

My version uses borlotti beans, and lots of veg: carrot, onion, celery, and fennel, along with bay leaf, thyme, and some white wine as well.

I haven’t made an Asian food inspired dish in a very long time. Sourcing ingredients can be quite difficult in our little town in south Italy, but yesterday I finally got a hold of some things and made this super delicious miso-peanut butter “ramen” topped with smoked sesame tofu and with home made chili crisp.
